Delicious and simple chicken dinner recipe flavored with saffron, veggies, and stock that your family will love.  If you’re looking for a quick chicken recipe, this One Pot Spanish Chicken And Rice is the answer! Easy enough to make it on a weeknight but elegant enough to serve it on a special occasion.

I am a huge fan of Spanish cuisine. It’s very straightforward, simple and fresh. Olive oil, olives, peppers, saffron. What’s better than that? the aromas coming from your kitchen will bring everybody to the table, including your neighbors.

It’s great to try out different regions and cuisines because you’re teaching your kids about new cultures and also educating their palates about new flavors.

 Here’s how the  One Pot Spanish Chicken And Rice is made:

We start by browning the seasoned chicken on both sides. Since this recipe is braised, first we brown, then we add the liquid. After the chicken is browned, we remove it from the pan and set it aside.  The excess fat is discarded leaving just a tablespoon of olive oil on the pan.

 The onions, peppers, and garlic are cooked in the same skillet until they become tender. Then we add the olive and let it cook for a minute. Now we add the rice and mix.

Now we add the stock, water, and saffron. We mix well until all the ingredients are incorporated.

Next, we add the chicken back into the pan, lower the heat and cover for 25 minutes. Voila! You’re done.

Doesn’t that look beautiful? Just serve the pot right on the table and let your family and friends dig in. The chicken turns out moist, the rice flavorful and the olives just make this dish pop!

You can also squeeze in some lemon juice on the whole dish if you’d like. Since my daughters are not huge citric fans I just added some chopped parsley.

One Pot Spanish Chicken And Rice

Ingredients

  • 1 pieces Whole Chicken cut up into 8 (you can mix and match the ones you like)
  • 1 Cup Long Grain Rice
  • 1 Red Pepper sliced into trips
  • 1 Large Onion chopped
  • 1 Clove Garlic chopped
  • 1/2 Cup Pitted Olives chopped
  • 1 Tablespoon Olive Oil
  • 1/4 Teaspoon Saffron crushed
  • 1 Cup Water
  • 1 Cup Chicken Stock
  • Salt + Pepper to taste
  • Chopped Parsley to garnish (optional)
US Customary - Metric

Instructions

  • Heat olive oil in a large pan over medium high heat
  • Season chicken on both sides with salt and pepper
  • Place chicken in the pan and brown on both sides. About 5 minutes per side
  • Remove chicken from pan and place aside
  • Discard the excess oil in the pan leaving just 1 tablespoon of fat
  • Toss the onion, pepper and garlic in the same pan. Add salt and cook for 2-3 minutes or until they soften
  • Add the olives and cook 1 more minute
  • Add the rice and mix with a wooden spoon so the rice gets coated with the veggies
  • Pour in the water and chicken stock. Add the saffron and stir. Cook until liquid starts boiling
  • Add the chicken back in the pan on top of the rice
  • Cover pan with a lid and reduce the heat to low
  • Cook for 25 minutes more or until chicken is cooked through and rice is fluffy
  • Sprinkle parsley and enjoy!
