Weekdays can be kind of hectic around here. Kids are tired from school and after-school activities, they are whining over doing homework and I am tired of schlepping them around town all day.

So when dinner comes, I am looking for something fast from start to finish. This Southwest Skillet Chicken And Rice is the perfect one pot meal. Not only is the side dish included, it is easy to make and incredibly delicious.

This Southwest Skillet Chicken And Rice  is cheesy, kind of sweet, savory and full of flavor. It tastes just like the filling of a fajita. In fact, you can even serve some warm tortillas alongside and roll them up.

To get all those southwest flavors I used store-bought salsa. Since I was serving them to my kids I used mild but if you like the heat, add some jalapeños and hot sauce.

Make a big ol’ batch using a large skillet and feed a large crowd for less. The more you save on food the more you can spend on good cocktails :).

Ingredients

  • 2 large Chicken Breasts cubed
  • 1 medium Onion chopped
  • 1 Green Pepper chopped
  • 1/2 Cup Corn
  • 3/4 Cup Chicken Stock
  • 1 Cup Long grain rice uncooked
  • 15 oz Salsa 1 jar
  • 1 Cup Shredded Cheese
  • 1 - 2 Teaspoons Olive Oil
  • Green Onions sliced
  • Salt + Pepper to taste
US Customary - Metric

Instructions

  • In a large skillet over medium high heat, add the oil
  • When the oil is hot, add the cubed chicken and brown on both sides. Season with salt and pepper
  • Add the peppers and onions. Cook until softened. 2 minutes
  • Pour in the stock and salsa. Cook until mixture starts to boil
  • Add the rice and mix
  • Cover with lid and reduce heat to low
  • Cook until the rice is done and liquid has evaporated. About 15 minutes
  • Remove from heat and add the corn. Mix and check for seasoning
  • Sprinkle in the cheese and green onions
  • Enjoy!

      Hi Mike… Brown Rice uses the same amount of liquid as white rice but takes double the time to cook, so keep that in mind when making this dish!

    I would suggest cooking brown rice separate. Otherwise you run the risk of dry chicken or crunchy rice.

    When making brown rice, keep in mind that it requires double the cooking time as white rice. I look forward to hearing how it works out for you!

    I tried this with brown rice not realizing or looking through the comments that it calls for white rice. Over an hour later, 3 1/2 cups of water added and 4 other hungry mouths to feed, the rice was still kind of hard but edible. My kids did not like it and requested that I don’t make it again. My husband and I enjoyed it even though the rice was still undercooked.

      Hi Anna, brown rice requires triple de cooking time and water…. next time try it with white rice and I assure you it will be a hit
