Spicy Sesame Noodles
After winter break, it’s been kind of hard getting back into my daily routine. I got used to sleeping late and being lazy around the house. Now that school started, I am running around feeling that I don’t have time for everything.
These Spicy Sesame Noodles are easy to make and can be on your table in 20 minutes or less. The perfect dish to help me ease back into my daily life.
Don’t worry about the spicy part, you can add or subtract as much red chilly pepper as you would like. If you’d prefer it mild, simply omit it from the dish. Honestly, I love it with medium spice since it adds tons of flavor without burning your tongue.
To me, there’s nothing more comforting than a noodle bowl. Just the fact that you can eat these with chopsticks gets my daughters excited to try them out. Of course, I make theirs without chilly oil.
If you have some veggies about to go bad in the fridge, just toss them with the mushrooms and create a whole new recipe. You can also add some protein like cooked chicken, shrimp or beef.
Top your Spicy Sesame Noodles off with fresh scallions to balance the flavors. Believe me, it makes a difference with the sauteed mushrooms.
I am always looking for quick weeknight dinner ideas since my girls have a lot of homework and after school activities, I have to sometimes think on the spot and get a meal done on the table in 20 minutes.
Sometimes during the weekend, I love to cook up a storm but other times we have so many plans that I don’t have enough time.

Spicy Sesame Noodles
Ingredients
- 12 ounces rice noodles
- 1/4 cup soy sauce
- 1 Tbsp sugar
- 2 cloves garlic minced
- 2 Tbsp apple cider vinegar rice vinegar is fine
- 4 Tbsp sesame oil
- 4 Tbsp light Olive oil or other of your liking
- A pinch of red chili pepper more if you like it Hot!
- green onions sliced thin
Instructions
- Cook the noodles according to package directions
- In a sauce pan bring to a boil all the ingredients above, except the noodles and the green onions - for just 2 minutes
- Remove from heat
- Pour hot sauce over the noodles and toss to coat
- Sprinkle with the onions and perhaps some sesame seeds
