Ingredients

  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 2 eggs
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup dulce de leche
  • 2/3 cup Heath toffee bits or butterscotch chips
  • Nonstick spray or parchment paper

Instructions

  • Preheat oven to 350°F.
  • Line an 8x8-inch baking pan with parchment paper or grease lightly with nonstick spray.
  • In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  • In a saucepan over medium-low heat, melt the butter and continue cooking until golden brown and fragrant, stirring often. Do not burn.
  • Transfer browned butter to a mixing bowl and let cool for 2 minutes.
  • Add brown sugar and mix until combined.
  • Beat in eggs one at a time, then add egg yolk and vanilla extract.
  • Add dry ingredients and mix just until combined.
  • Fold in the toffee bits or butterscotch chips.
  • Spread half the batter into prepared pan.
  • Warm dulce de leche for 10-20 seconds in microwave until spreadable.
  • Spoon dulce de leche evenly over batter.
  • Top with remaining batter and gently spread to cover.
  • Bake for 28-32 minutes, until edges are set and center is slightly soft.
  • Cool in pan for at least 20 minutes before slicing.
  • Cut into squares and serve.

Notes

  • Do not overbake for chewy blondies.
  • Brown butter adds deep caramel flavor, worth the extra few minutes.
  • Chill before slicing for cleaner squares.
  • Store covered at room temperature for 3 days.
