Easy Cheesy Ravioli Lasagna
Also called “Lazy Lasagna” because this vegetarian version is super easy to make and requires few steps. The taste is amazing. If you’re a fan of cheese, then you’re going to love this dish.
Layers of ravioli, homemade Alfredo sauce, cheese, and fresh spinach. What else can you ask for? To me, a hot casserole is the perfect comfort food after a long day.
Since I usually bake lasagna with tomato sauce, I decided to variate my usual recipe with an all-white version. It goes wonderfully with cheese and ravioli. Next time I’ll add some chopped artichoke hearts for an additional texture.
If you’re in a rush or simply don’t want to make the sauce, you can buy the jarred Alfredo sauce and use it instead.
Now let’s talk about the cheese… I used 2 kinds to add some flavor and melting power. For those reasons, I chose Sargento® Shredded Mozzarella which is shredded in larger pieces and Sargento® Chef Blends® Shredded 6 Cheese Italian, shredded fine. Mondays and Wednesday are my busiest days. I come home from soccer with my girls around 6:30 pm. At that time, I have to start dinner, help them with homework, and make sure they take a shower.
This ravioli lasagna has very little prep so it’s perfect to whip up in a moment. I usually make the sauce in advance and leave it in the fridge until ready to use. My girls sometimes help me assemble it. They think it’s so much fun.

Ravioli Lasagna
Ingredients
For Alfredo Sauce:
- 1 1/2 tablespoons olive oil
- 3 tablespoons all purpose flour
- 1 cup milk
- 1 cup chicken or vegetable stock
- 1 clove garlic minced
- 1 teaspoon garlic powder
- 3/4 cup parmesan cheese grated
- salt + pepper to taste
For Lasagna:
- 20 oz cheese ravioli frozen
- 4 oz Sargento® Shredded Mozzarella
- 4 oz Sargento® Chef Blends® Shredded 6 Cheese Italian
- 1 cup fresh spinach
Instructions
- Preheat oven to 350 degrees Fahrenheit
For alfredo sauce:
- Place the olive oil in a skillet over low heat
- Add the minced garlic and cook for 2 minutes. Careful no to burn the garlic
- Toss in the flour and mix until all the flour is cooked. About 1-2 minutes
- Add the milk and stock and mix using a whisk. Let this mixture cook on medium heat until thickened
- Add the garlic powder, a bit of salt and pepper and parmesan cheese. Mix until combined
To assemble lasagna:
- In an 8x8" square baking pan, place a little bit of Alfredo sauce on the bottom
- Assemble the cheese ravioli in a single layer
- Add a layer of spinach on top
- Add both kinds of cheese on top
- Add more sauce and repeat the same layers ending with the sauce
- Bake for 30-35 minutes until mixture has become bubbly. Broil for 1-2 minutes to brown the top
- Remove from the oven and let it cool 5 minutes before cutting
