Delicate Vanilla Tea Muffins

If you’re looking for a low-sugar muffin recipe that has a nice flavor and texture, then you’ve come to the right place. Not only are they delicate and soft, but they are also super easy to make.

Perfect for breakfast or snacking, these delicate and soft Vanilla Tea Muffins are made with black tea giving it a beautiful & aromatic flavor

I decided not to incorporate fruit in these muffins to avoid muting the tea and vanilla. But if you’d like you’re welcome to add blueberries or raspberries to the batter.

The secret to achieving this beautiful fluffy texture is to mix with a whisk until the batter is just incorporated, overmixing will result in flat and hard baked goods.

The best part? Each muffin only has 132 calories. I used Swerve no sugar sweetener to save on calories.

With muffins it is easy. Mix the wet ingredients in one bowl, and mix the dry ingredients in another. At the end just combine the wet into the dry and scoop into a muffin pan. Prep takes less than 5 minutes and no special equipment or mixer is required.

Ingredients

  • 2 1/4 cups All Purpose Flour
  • 1 Lipton Tea Bag
  • 3/4 cup Swerve Sweetener
  • 1/2 teaspoon Salt
  • 1 tablespoon Baking Powder
  • 2 Eggs
  • 2 teaspoons Pure Vanilla Extract
  • 1 stick Butter melted
  • 1 cup 2% Milk
  • 1 1/2 tablespoons Vinegar
US Customary – Metric

Instructions

  • Preheat oven to 400 degrees F.
  • Line muffin tin with paper liners
  • Mix the milk with the vinegar and let it sit for 5 minutes (this is make low-fat buttermilk)
  • Sift the contents of the tea bag, flour, salt and baking powder together. Pour dry ingredients into a bowl and mix in the Swerve Sweetener
  • In another bowl, whisk the buttermilk, eggs, and cooled melted butter
  • Mix in the wet ingredients into the dry. Mix with a whisk until just combined. Do not overmix
  • Pour batter into muffin tins filling them 3/4 of the way.
  • Bake for 17-18 minutes or until browned on top.
  • Enjoy!
