Blue Mashed Potatoes

No, your eyes are not deceiving you and no, I didn’t use food coloring. This dish is actually made with blue potatoes. Aren’t they cute? I even left some of the peel to give it color and texture.

In case you’re wondering, these Blue Mashed Potatoes taste exactly like the regular kind but it has an intense color that I just love.

Basically, it’s taking a boring item and upgrading it to the next level. These Blue Mashed Potatoes are unique, creamy, beautiful, and of course, delicious. I found them so flavorful that I didn’t have to add cheese, cream or chives. Salt, pepper, butter and milk is all it needs.

You can customize this recipe to your liking. Next time I’ll add a crunchy element on top and will bake just before serving.

If your kids are picky like me, they will love these Blue Mashed Potatoes. They’ve been obsessed with the color purple lately. Now it’s part of my Thanksgiving menu.

The first time I tried blue potatoes was on a Jetblue flight. The flight attendant handed a potato chip bag and when I opened I saw bluish – purplish – chips. They tasted good. From then on, I was hooked.

I used them too in my Tangy Salmon Sheet Pan dinner and they made my dish so colorful. We, humans, eat first with our eyes, that’s why I am always looking for different ways to make my food more appealing.

Blue Mashed Potatoes

Ingredients

  • 2 lbs blue potatoes washed
  • 1/2 cup milk
  • 4 tablespoons butter
  • Salt + Pepper to taste
US Customary - Metric

Instructions

  • Boil whole blue potatoes in a large saucepan with abundant salted water until they become fork tender
  • In a smaller saucepan, heat the milk and butter together (you may also use the microwave)
  • When potatoes are tender, drain and return to the pot
  • Using a masher or ricer, mash the potatoes
  • Add the hot milk and butter and mix until creamy. Test for seasoning and add more salt if needed. If the puree is too stiff, add some more milk and butter. 
  • Enjoy!
