Creamy Carrot Ginger Soup Recipe

Craving a little comfort soup while you’re on a diet? Then this is the soup for you! It’s creamy, tangy, filling, and delicious!. 

I love to make a big pot on Monday and heat it for dinner the rest of the week. For ginger, you can use fresh or the ones that come inside a tube. 

What’s great about this Carrot Ginger Soup Recipe is that is low fat, vegetarian, and contains absolutely no dairy! Yet is creamy and full of flavor. If you are like me and love a spicier flavor you can add more ginger.

Creamy Carrot Ginger Soup Recipe

Ingredients

  • 2 lbs Carrot peeled and sliced
  • 1 medium Onion chopped
  • 1 Tb Ginger minced
  • 1 ts Thyme dried
  • 1 tb Olive Oil
  • 6 Cups Vegetable Stock or chicken
  • Salt + Pepper to taste
US Customary - Metric

Instructions

  • In a heavy-duty pot, heat olive oil at Medium Heat
  • Stir in carrots and onions, cook until onion begins to soften (4 minutes)
  • Add thyme, salt, pepper and Ginger, cook for 10 minutes more
  • Pour in Vegetable stock and let it simmer for 20 - 30 minutes or until the carrots are soft
  • Puree the soup in a blender. Check for seasoning
  • Enjoy!
