Easy Peanut Butter Cookies
These peanut butter cookies will be your go-to recipe when kids come home from school. They take less than 20 minutes to make from start to finish, and they are prepared without butter, oil or flour. Just simple ingredients that kids and adults will love.
Did I mention how chewy and delish they are? Dunk them in a big glass of milk and get ready to taste decadence. I added some salted peanuts and raisins in mine, but you can simply throw in some chocolate chips, cranberries, butterscotch chips or leave them as is. The possibilities are endless.
What I love about these easy Peanut Butter Cookies is that they are way healthier than regular cookies and that the ingredients are already in your pantry. So what are you waiting for? Put your apron on and get crackin’.
For these easy Peanut Butter Cookies, I used rolled oats (aka old fashioned oats), but if you require them gluten free, they sell GF rolled oats and they work perfectly into the batter.
My daughters eat their lunch at school very early in the morning, sometimes as early as 10:00 am. When they come home they’re usually starving but, since they’ll be eating dinner in a couple of hours, I like to give them snacks that will fill them up without spoiling up their appetite.
A glass of delicious DairyPure milk and TruMoo chocolate milk served alongside these cookies make the perfect after-school snack that will satisfy them, give them calcium and the vitamins needed, and also fuel them up for all those after-school sports and activities they’re enrolled in.

Easy Peanut Butter Cookies (flourless)
Ingredients
- 2/3 cup Old Fashioned Oats if preferred gluten free, also called rolled oats
- 2/3 cup Brown Sugar
- 1 teaspoon Baking Soda
- 2 teaspoons Cocoa Powder unsweetened
- 1 cup Peanut Butter
- 2 eggs large
- 1/3 cup SaltedPeanuts chopped (optional)
- 1/3 cup Raisins optional
Instructions
- Preheat oven to 350 degrees F.
- In a bowl, mix the oats, baking soda, and brown sugar
- In another bowl, mix the peanut butter and eggs until completely combined
- Add the oat mixture into the peanut butter mixture and combine well with a spoon
- Pour in the peanuts and raisins. Mix
- Using a tablespoon measure, scoop up balls of cookie dough onto a cookie sheet lined with parchment paper
- Flatten the cookie balls with a fork
- Bake for 10-11 minutes
- Let them rest on the cookie sheet for 5 minutes before placing them on a cookie rack to cool off completely
- Enjoy with a glass of milk
- Bake for 10-11 minutes
