Peanut Butter Caramel Popcorn Bars

If you thought popcorn was just for the movies, then you’re going to be surprised with this funky dessert.

These peanut butter caramel popcorn bars start with a chewy peanut butter cookie crust, then have a chocolate caramel layer, a peanut butter cream, and finally topped with salted caramel fudge popcorn. Sounds good doesn’t it?

Every bite you take will transport you to paradise.

Such sweetness, softness, and flavor. Peanut butter, chocolate, and caramel were meant to be together. It’s a 3-way marriage made in heaven. Adding delicious popcorn on top makes this recipe different and special. Something you would never expect.

For the top, I used store-bought caramel popcorn! It makes life easier and they’re all delicious. Just use your favorite brand and you’re set.

So order a few bags online and you will see what I mean. I am sending a box to my sister in New York. She’s hosting a Holiday party and was looking for something original to serve as apps and dessert. Since she’s not much of a cook this will be perfect for her.

Peanut Butter Caramel Popcorn Bars

Ingredients

For Peanut Butter Cookie Crust

  • 4 tablespoons stick of unsalted butter softened
  • 1/4 teaspoon vanilla extract
  • 1/2 cup plus 2 tablespoons of all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 cup smooth peanut butter
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 egg
  • Pinch of salt

Filling

  • 1 1/2 cups of semi-sweet chocolate chips
  • 1 cup of Caramel Bits

Peanut Butter Cream

  • 4 tablespoons Butter softened
  • 1/4 cup + 1 tablespoon of peanut butter
  • 3/4 cups powdered sugar
  • 1 tablespoons milk
  • 2 cups of Caramel Popcorn
US Customary - Metric

Instructions

  • Preheat Oven to 350 Degrees Fahrenheit
  • Line an 8x8" pan with aluminum foil and spray the foil with nonstick spray or butter
  • In a small bowl mix the flour, baking soda, and salt. Set aside
  • Using the bowl of a mixer, cream the butter and sugars together for 3-4 minutes until creamy. Scrape the sides of the bowl down with a spatula
  • Add the egg, vanilla and peanut butter. Keep mixing on medium speed until combined
  • Place this entire mixture on the 8x8 pan. With a spatula press down until the dough is completely flat and covers the entire surface
  • Bake for 15-18 minutes or until the top starts to brown
  • Remove mixture from oven and immediately sprinkle the caramel bits and chocolate chips on top. Wait 1-2 minutes for the chocolate to start melting, then spread with a spatula until the chocolate covers the entire surface
  • Let this mixture cool completely

For Peanut Butter Cream

  • Place the ingredients in a mixer until combined
  • Spread this mixture on top
  • Add the popcorn and press down gently so it sticks to the peanut butter cream
  • Remove from pan and cut into squares or bars
