Ranch Whole Roasted Cauliflower
Cauliflower is one of those underrated veggies people tend to forget about. But after they try this amazing Ranch Whole Roasted Cauliflower they’ll be hooked. It flavorful, hearty and super easy to make.
It’s one of those side dishes you stick in the oven and put on the timer. No babysitting required. I love how the tops and sides become super crispy keeping the inside soft and flavorful.
If you’re watching your weight or keeping a low-carb diet, then this dish is perfect since it’s filling and it can replace potato and starchy cravings.
Last year I posted a cauliflower fried rice recipe on the blog. Since then, it’s been repinned almost 45k times. So this summer I decided to take the cauliflower and known flavors to create this delicious side dish that even your kids will love and ask for seconds.
My husband comes home from lunch every day and sometimes it can get pretty boring figuring something different to eat. Now I can add something new to the rotation.
This Ranch Whole Roasted Cauliflower is also great for entertaining. If you have a friend or relative who is vegetarian or vegan, you can simply serve it as an entree. In my house, it is a healthy side dish to my dinner.
Now that summer is winding down and school starts in less than 3 weeks, I am trying to adjust my routine before things get hectic again. Honestly, I am not looking forward to school to begin. Time flew by so fast.

Ranch Whole Roasted Cauliflower
Ingredients
- 1 medium cauliflower
- 1/2 cup olive oil
- 3 tablespoons Ranch Seasoning Mix
- salt/pepper
Instructions
- Preheat oven to 400 degrees.
- Remove all the leaves from under the cauliflower. Place it in an oven safe dish.
- Mix the olive oil, the ranch and salt/pepper in a bowl until smooth. With a spoon or a brush evenly coat the whole cauliflower. Turn it upside down and drizzle a bit of the mixture underneath as well. You may also discover that using your hands makes this process go faster.
- Cover with foil, make sure no steam escapes. Cook in the oven for about 50 minutes, or until a skewer goes thru the cauliflower easily. It will vary on the size you have, of course.
- Remove the foil, and broil for about 2 or 3 minutes. Or until it starts to brown on the top. Keep an eye on it, as it burns easily.
- Allow to rest for 5 minutes before slicing. Season with extra salt if needed.
