Ingredients

  • 1 medium head cauliflower leaves removed, stem trimmed
  • 1/3 to 1/2 cup olive oil see notes
  • 3 tablespoons ranch seasoning mix store-bought or homemade
  • Salt and pepper to taste

Instructions

  • Preheat oven to 400°F (200°C).
  • Remove the outer leaves and trim the stem so the cauliflower sits flat. Place in a baking dish.
  • In a bowl, mix olive oil, ranch seasoning, salt, and pepper until combined.
  • Brush or rub the mixture all over the cauliflower, making sure to coat every surface, including the bottom.
  • Cover tightly with foil and roast for 45–50 minutes, or until a knife slides easily through the center.
  • Remove foil and broil for 2–3 minutes until golden and slightly crispy on top.
  • Let rest for 5 minutes, slice, and serve.

Notes

  • Use closer to 1/3 cup oil for a lighter version, or 1/2 cup for richer flavor
  • Make sure cauliflower is dry before coating for best texture
  • Cooking time varies based on size
  • For extra crispiness, roast uncovered for the last 10 minutes (instead of broiling)
  • You can use Greek yogurt + ranch seasoning for a lighter option
