Ingredients

  • 13.4 oz Dulce De Leche 1 can
  • 1 Cup Self Rising Flour substitute below
  • 6 Eggs

Instructions

  • Preheat oven to 375°F. Line a 12-cup muffin pan with liners or grease well.
  • In a large bowl, beat eggs with a mixer for 3 to 4 minutes until light and fluffy.
  • Add dulce de leche and mix until smooth and fully combined.
  • Add self-rising flour and mix on low speed just until incorporated. Do not overmix.
  • Divide batter evenly among muffin cups, filling each about 3/4 full.
  • Bake for 10 to 15 minutes, or until tops are golden and a toothpick inserted in the center comes out clean.
  • Cool slightly and serve warm or at room temperature.

Notes

  • Do not overbake or muffins may dry out.
  • Serve warm with extra dulce de leche if desired.
  • Mini muffins bake in about 8 to 10 minutes.
  • Store covered at room temperature for 2 days or refrigerate for 5 days.
  • No self-rising flour? Use 1 cup all-purpose flour + 1 1/2 teaspoons baking powder + 1/4 teaspoon salt.
