Happy Friday everybody! Today I present to you a little piece of heaven. This Gooey Butter Cake Recipe have the most amazing flavor and texture.
Originally for St. Louis, Missouri, Gooey Butter Cake bars have a crunchy crackly topping and chewy and soft center. The name really says it all.
I added my some chocolate and coconut for a contrast of flavor and texture. In reality, the chocolate makes the bars pop. After you have one bite, you’ll be hooked.
Unfortunately, I haven’t had the pleasure of visiting that beautiful city but I tried this cake a few years ago in Culinary School.
We had a class that taught regional American cooking. I learned so much about the cuisine and rich history of each part of the States. When it came to Missouri, I tried the Ribs (amazing!) and this Gooey Butter Cake Recipe.
When I looked at the bars I didn’t think much of them, but when I took a bite I knew I was in love. You will know what I mean when you try them.
If you’re not an experienced baker, do not worry! this Gooey Butter Cake Recipe is super EASY to make and requires “no special” ingredients. I am sure you have everything you need in your pantry.
You can also customize it to your liking. For instance, omit the coconut or change it up for butterscotch chips, add peanut butter, Nutella, nuts, cocoa powder, etc.

St. Louis Gooey Butter Cake Recipe
Ingredients
For Crust
- One Box of Vanilla or Yellow Cake Mix
- 1 Egg
- 4 tablespoons unsalted butter melted, 1/2 stick
For Middle
- 1 Cup Semi-Sweet Chocolate Chips
- 1/2 Cup sweetened Coconut Flakes
- 1 - 8 oz block of Cream Cheese at room temperature
- 2 eggs
- 4 cups confectioners sugar
- 1 teaspoon vanilla
- 1 pinch of salt
Topping
- Confectioners Sugar
Instructions
- Preheat Oven o 350 degrees Fahrenheit
- Spray a 9x13" rectangular baking dish with non-stick spray
- In a bowl, mix the cake mix, egg, and melted butter
- Press this mixture on the bottom of the baking dish
- Sprinkle the chocolate chips and coconut flakes on top
- In another bowl, mix the cream cheese with a mixer until fluffy. About 3 minutes
- Add the one egg at a time beating well after each addition
- Lower the speed and slowly add the confectioners sugar, salt, and the vanilla
- Mix until everything is creamy
- Place the filling on top the coconut and chocolate chips
- Spread evenly
- Bake for 35-45 minutes or until the top has browned
- Remove from the oven and let it cool completely before cutting
- Sprinkle with confectioners sugar
- Cut into squares
- Enjoy!
