Sweet And Savory Apple Noodle Kugel
Why wait for the Holidays? This delicious noodle kugel is so easy to make and is completely freezable. You can enjoy it as an original side dish to a boring weeknight dinner idea.
Crispy on the outside, creamy on the inside. What more can you ask for?
Never heard of a Kugel before? It’s a Jewish baked casserole dish, originally from Eastern Europe. Kugel means “ball” in Yiddish.
I have no idea why a ball would translate into this dish.
I’ll ask my grandmother, she makes it a savory one with only potatoes and a sweet dessert one with apples.
This Apple Noodle Kugel recipe, in particular, is not too sweet and not too salty. I love to serve it as a side dish and not a dessert.
Jewish and Latin cooking has a lot of sweet and savory pairings. For some, the combinations may seem strange, but when they try them, they find out that the flavors work together.
So don’t be afraid to play around with this dish. It’s easily customizable and adaptable. All you need are a batch of cooked No Yolks Noodles, eggs, and your flavors of choice.
Today I used onions and apples. On other days I choose broccoli, onions, and leeks. And sometimes I forgo the savory and just use sauteed apples, peaches, or pears, with raisins, cinnamon, nutmeg, and sugar.
Recipes for Noodle Kugels may vary. Some are more custard-like and are perfect for breakfast, dessert, or brunch. Usually, they are made with sour cream, cottage cheese, and lots of sugar.

Apple Noodle Kugel
Ingredients
- 12 oz Egg Noodles
- 3 Granny Smith Apples peeled and cubed
- 1 Onion chopped
- 3 tablespoons Water
- 1 teaspoon Cinnamon
- 1/2 teaspoon Nutmeg
- 2 tablespoons Sugar
- 1/2 cup Golden Raisins or more if you'd like
- 2 teaspoons Vegetable oil
- 4 Eggs
- Salt to taste
Instructions
- Preheat oven to 350 degrees Fahrenheit
- Spray a 9x13 baking pan with non-stick spray
- Cook the noodles according to the package directions. Drain and set aside
- While the noodles cook, heat a skillet over medium heat and add the vegetable oil
- Add the onions and apples. Season with salt and cook until they start to soften and caramelize. About 6-7 minutes
- When onions caramelize add the sugar, raisins, cinnamon, nutmeg, and water. Cook for 2 minutes more
- Remove from heat and place it in a bowl with the noodles. Let it cool for a bit before adding the eggs
- When the mixture cools, add the egg and mix rapidly until combined
- Pour the kugel mixture into the baking pan and bake for 45 minutes to an hour or until the top browns
- Remove from the oven and enjoy!
