Cheesy Chicken Casserole

If you’re looking for a quick weeknight dinner idea that will get the whole family to the table, then this Cheesy Chicken Casserole is a must. Enjoy delicious chicken and pasta tossed with a tomato sauce and topped with cheese. Does that sound delicious or what?

Some nights I have a quick bite and other ones I am craving some comfort food. Perfect for long stressful days and tired kids. My girls love chicken, pasta, and cheese and I know making something they love will bring a smile to their faces.

Right now they are offering tons of easy chicken recipes like this delicious Cheesy Chicken Casserole that I made last night. Easy, uncomplicated and delicious. Ready in 30 minutes or less. Perfect for busy families like ours.

All you need to make this delicious Cheesy Chicken Casserole are Pasta shells, chicken breast pieces, cheese, green pepper and canned tomato. In my personal opinion, the green pepper adds TONS of flavor to the dish so don’t omit it. If you would like to go bold, add some jalapeño peppers for a nice kick.

To start, brown the chicken in the skillet and cook the pasta with abundant boiling water. Then mix all the ingredients together and bake with cheese on top. Next time I’ll add some parmesan cheese on top to get a crunchy texture.

What I LOVE about pasta casseroles is that the pasta on top is crunchy while the pasta at the bottom is soft. Hope you can make this Chicken Casserole at home.

Ingredients
  • 8 oz Pasta Shells
  • 1 lb Chicken Breast cubed
  • 1/4 Teaspoon Garlic Powder
  • 1 can Diced Tomatoes undrained, 14.5 oz
  • 1 can Tomato Sauce 15 oz
  • 1 1/2 Cups Shredded Italian Cheese
  • 1 Green Pepper diced
  • Nonstick Cooking Spray
Instructions
  1. Preheat oven to 375 Degrees Fahrenheit
  2. Cook pasta according to the package's directions. Drain
  3. Meanwhile heat a skillet on Medium High Heat and add nonstick spray
  4. Brown the chicken in the skillet and add the green pepper and garlic powder. Cook until the chicken is no longer pink and peppers soften. About 5-7 minutes
  5. Add the cooked pasta to the chicken, pour the tomato sauce, diced tomato and half of the cheese. Mix well
  6. Pour entire mixture in a casserole dish and top with remaining cheese
  7. Bake for 15 minutes or until cheese melts and becomes bubbly
  8. Enjoy!

    This was my first serious dish after switching from non stick to all stainless cuisinart cookware. And I increased recipe by 50% for more leftovers. Simple dish overall and looking at the plates and bowls scraped clean with French bread, I’d call it a hit. I did this as a dinner for my wife and family on Mother’s Day. After she picked this casserole from a list of six that I narrowed it down to, she was at first disappointed–I only let her hear the names, but not the ingredients. She said that she typically hates the combo of chicken with tomato sauces. But her plate was just as clean as mine and my 8 and 10 yo. I had to combine all ingredients in the larger 9×11 pan and cook it for about 10 min longer at 400+ due to the larger portion. I think that next time I’ll retry to add more veggies and herbs for a more complex flavor. We enjoyed it as is.
