Just 4 ingredients, this mango salad is the perfect summer recipe for the outdoors. Easy to make and delicious. Serve it as an appetizer, salad or even as a salsa with chips. I personally serve it as a salad, it’s perfect for this time of season and it has tons of flavor.
I grew up eating mangoes, Venezuela had mangoes trees on every corner. There were thousands od recipes for mangoes. From the mango ceviche to the fancy Mango Gelee. I absolutely love them. They are soft, sweet and have this meaty texture. My favorite is the peel. Everybody throws it out, but I collect them in a baggie and eat them all day long. It’s chewy with a bite.
When mangoes aren’t ripened we call them “green mangoes” they are hard and sour. My husband LOVES to cube them up and eat them with salt and vinegar. Sounds strange but it really tastes good. If you tend to like acidic foods then give them a try.
A few years ago (by a few I mean 15 or more, yikes!), a friend of my mom’s taught her how to make this Mango Salad and instantly we were hooked. We used to serve it alongside heavy foods to give it a nice fresh balance to the whole meal. It’s the perfect alternative to Ceviche if you have guests with fish allergies. And what’s best, is that it comes together in minutes. You can choose to make it advance and you won’t have to assemble it at the last minute. Perfect when entertaining guests.
So if you’re firing up the grill don’t miss serving this Mango salad alongside. It goes perfect with grilled beef. Not as a salsa since it’s not soupy, but as a nice “vegetable” that your kids will definitely eat willingly. My 5 year old loves eating mangoes and I know she’ll love this dish.
