Healthy Candy Corn Bars Recipe

Want to make something fun for Halloween without worrying too much about fat and sugar content? Well, these healthy Candy Corn Bars are for you.

My kids love them and trust me – They are SO EASY to prepare. 2 ingredients: Jell-O and Yogurt. That’s right… nothing fancy or complicated. I applied the same technique as my Valentine’s Day Hearts.

I made 16 bars and they were gone in minutes. Even my husband was joining in the feeding frenzy. The great thing about these Candy Corn bars is that you can make them in any color or flavor you want.

You can use molds, sheet pans, and cookie cutters. The possibilities are endless. They have a yogurt flavor with a Jell-O consistency. Nom Nom!

I am thinking of Thanksgiving, Hannukah, and all the recipes I can come up with for this Jell-O Yogurt technique. The white part on top was my 4-year-old’s favorite part – it was just vanilla yogurt and some plain flavorless jell-O.

What I love about this recipe is that doesn’t take hours to set and it’s perfect for moms who get interrupted by their kids all the time. Tell me if you can relate to this.

Imagine you are in the kitchen cooking dinner and you hear this ” Mom where are my shoes” “Mom!! I am hungry!” “Mom, Mom, Mom” – I guess that happens to me all day. 

Here’s my advice: make one layer, let it set up in the fridge, and go look for the kid’s shoes. Make the second layer and go separate fighting kids..etc.

These are the ingredients needed to make these delicious Candy Corn Bars are:

– 12 Fat-free Vanilla yogurts, 6 oz each, or 3 big tubs

– Lemon Jell-O, Orange Jell-O, and  1 envelope of unflavored Gelatine (for the top part)

Directions:

– Line the bottom of an 8×8 square pan with Parchment paper and add with a little nonstick spray.

– Since the bottom part of the candy corn is yellow let’s start by mixing 3 yogurts and one box of lemon Jell-O. In a saucepan dump the Jell-O and add the yogurt, stir over medium heat until the Jell-O is completely dissolved.

As you can see in the pics I didn’t wait until it was completely dissolved and that’s why the yellow part of my bars didn’t set up completely. It doesn’t take more than 5 minutes until it completely dissolves. The mixture doesn’t have to boil, just come together.

-Pour this mixture on the bottom of the mold and insert it in the fridge for 20 minutes to set up (time to help the kids with homework, hubby find his socks, etc)

– For the second layer, since the orange part is bigger in the candy corn than most colors, I used 4 yogurts (24 oz) and one box of Orange Jell-O to make them. Just repeat the same step as the layer beforehand and pour it on top of the yellow layer.

Let it set up for about 20 minutes and make the last layer.

– For the white layer, I used 2 yogurts (12 oz) and 1 envelope of Unflavored Gelatin. Mix in a saucepan over medium heat until the gelatin is completely dissolved. Pour it on top of the second layer and let it set up for 20 minutes more!

See? easy and allows for interruptions!

Ingredients

  • 9 - 6 oz Vanilla Yogurts total 72 oz
  • 1- 3 oz box of Lemon Jell-O
  • 1- 3 oz box of Orange Jell-O
  • 1 envelope of Unflavored Gelatin

Instructions

  • Line the bottom of an 8x8 pan with parchment paper. Add a little cooking spray
  • In a saucepan over medium heat, combine the Lemon jell-O and 18 oz of yogurt until Jell-O is completely dissolved
  • Empty the Yellow mixture into the bottom of the 8x8 pan. Place in the fridge to set up for about 20 minutes.
  • For the orange layer: combine 24 oz of yogurt (4 x 6 oz) and 1 box of Orange Jell-O in a saucepan over medium heat until Jell-O is completely dissolved.
  • Empty the orange mixture on top of the yellow layer. Place in the fridge to set up for about 20 minutes
  • For the last layer (white) combine 12 oz of yogurt and 1 envelope of gelatin in a saucepan over medium heat and combine until gelatin dissolves completely
  • Pour on top of the orange layer and let it set up for approximately 20 minutes in the fridge
  • When the mixture sets up completely unmold using the parchment paper, cut into squares and enjoy!

    Not sure if I am reading the recipe incorrectly. Should this be a total of 9 – 6oz yogurts rather than 12? I am only totaling 54 oz of yogurt used for the 3 layers. Thanks and I can’t wait to make this today!
