Chicken with Orange Plum Sauce

Roasted chicken glazed with sweet and sour orange plum sauce for a quick weeknight dinner idea. Easy to make and delicious. My kids love it and I’m sure yours will too. Imagine crispy chicken with a super flavorful sauce on top. You can’t go wrong with this one.

In my house, roasted chicken is a weekly staple in our dinner menu. We vary the sauces and flavor but the chicken stays. It’s one of those items that everybody loves and nobody complains about. But to be honest, I get bored with the same old chicken.

So this week, I decided to kick it up a notch and add some cool flavors. When you take a bite, you will get the crunch of the chicken skin, the sweetness of the plum, and the tanginess of the orange all wrapped into one.

I had to make this Chicken with Orange Plum Sauce twice because the first time I did it, my kitchen looked a mess and with that, I forgot to write the exact quantities of ingredients I was adding into the sauce (yes, I need better organizational skills).

So the second time I pulled out the same ingredients but this time, I started measuring them to get the flavor just right and you will be able to duplicate it at home.

To make roasted chicken, it’s all about the technique. I love roasting it by itself, skin on for a few minutes. That way, the skin gets super crispy while the interior stays juicy.

Then, I add the sauce and keep it roasting a while longer. The sauce will adhere to the chicken giving it a nice flavorful coat.

If you don’t have all the ingredients needed to make the sauce, simply skip those and use the rest. That’s what I always do when I consult cookbooks.

Usually, I end up adding some stuff and creating something way different than what I started with, but that’s the beauty of cooking.
