I always thought that veggie burgers tasted like weird dry hockey pucks. One would need to smother them with sauce to swallow them. That was until I tried this one.
It’s moist, meaty, and with a wonderful combination of spices that you will never miss replacing with beef. Every bite you take it’s memorable. There is so much flavor and texture. That’s why I call these, the ultimate veggie burger.
Last week I was dining with my mom in the Stowe Mountain Resort in Vermont. There they have a delicious restaurant called Solstice. My mom ordered the veggie burger for lunch (yup the one you see above) and as soon as she took a bite, she fell in love with it. I tried it and immediately regretted ordering my dish. I wanted that burger!

So my mom told the waiter: “My daughter is a chef and a very famous blogger and she would like to meet the chef for the veggie burger recipe” I wanted to crawl under the table and hide. How embarrassing! I vowed to myself to never let her drink a glass of Prosecco during lunch.
Anyway, Chef Benjamin Noe came out of the kitchen and gave me the recipe. How many chefs do you know to give out their recipes so willy-nilly? Not only was this chef an amazing cook, but he was also very generous.
This burger is gluten-free, Vegan, and very easy to make. It’s mainly made out of black beans, black quinoa, and veggies. The combination of spices is what gives this veggie burger an incredible flavor and aroma. Serve it with a toasted bun and some veggies and you’ll be hooked too!

The Ultimate Veggie Burger
Ingredients
- 2 cups Black or red Quinoa cooked
- 15 oz Black beans from a can
- 8 oz Button mushrooms diced in small pieces
- 1 in Red Pepper diced small pieces
- 1/2 Red Onion chopped
- 1/4 cup Cilantro leaves chopped
- 1 tablespoon Lime zest
- 1/4 cup Lime juice about 1 large lime
- 2 tablespoons Smoked paprika
- 1 Tablespoon Ancho chili powder
- 1 -2 tablespoon Cornstarch more if needed
- Salt and Pepper to taste
For Serving
- 8 Hamburger Buns optional
- 12 Pickles optional
- 6 Tomato Slices optional
Instructions
- Blend half of black beans into paste
- In a bowl, mix all the ingredients together
- Shape into patties
- Heat olive oil in a skillet over medium heat
- Cook patties for 3-4 minutes on each side
- Serve them by themselves or inside a toasted bun

Mmmm!! I love a good veggie burger but they can be so hard to find!! Some are just so awful!! I will have to give this one a try asap!! I like that Id be making it myself so I know exactly what’s in it 😉

Hi Melody! The cornstarch is used as a binder to avoid crumbling. Just make sure you add enough
