Miso Salmon Over Sesame Noodles

I love this Miso Salmon! It’s simple enough for a weeknight meal, but elegant enough for entertaining. They are perfectly delicious for a nice dinner. No wonder they charge around $35 for a dish like this at a fancy restaurant.  Now when you see how easy it is to make, you can do it yourself for much less!

What I do, is marinade the salmon and broil it. That’s where it gets those beautiful toasted marks while still maintaining its flavor and juiciness. The flavor is bold without being sweet and it goes great with mild sesame ginger noodles. I top them off with green onions and sesame seeds for a little crunch and a little freshness.

Miso is easily found at Trader Joe’s, Whole Foods, or any other food store that carries a wide variety of Asian products. If not, you can get it HERE on Amazon.

If you don’t want to serve this Miso Salmon over Sesame Noodles you can also substitute it with white rice, steamed bok choy, or alongside a nice salad.

I just love the look and combination of flavors. It feels like I’m eating at a fancy restaurant in my PJs. Gotta love being in PJ’s!

Last week I was slammed with work, so this week I just decided to take it easy and cook from the heart. I started cooking whatever crazy thing came up in my head.

That’s why this week’s menu was so eclectic: One Pot Lasagna, Vegan meringue cookies, Colombian cheese bread, and this yummy Miso Salmon over Sesame Noodles.

Ingredients

For Salmon

  • 4 Salmon Fillets
  • 2 tablespoons Soy Sauce
  • 1/4 cup plus 2 tablespoons of White or Yellow Miso
  • 3 tablespoons Rice Wine Vinegar
  • 3 tablespoons Mirin
  • 1 teaspoon Sesame Oil

For Sesame Noodles

  • 16 oz Egg Noodles (found in the refrigerated section of your supermarket. You can also use linguini spaghetti or angel hair pasta)
  • 1 tablespoon Sriracha or Chili Oil
  • 2 Scallions chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Ginger minced
  • 1 Tablespoon Rice Vinegar
  • 3 Tablespoons Soy Sauce
  • 1 Teaspoon Sugar or Truvia
  • 2 Tablespoons Sesame Oil
  • Salt and pepper to taste

Garnish

  • Sesame seeds optional
  • Green onions optional

Instructions

For Salmon:

  • Place the soy sauce, miso, vinegar, mirin and sesame oil in a bowl. Mix until combined
  • Place salmon on a large zip top bag or on a baking dish
  • Pour sauce on top and let it marinade for 30 minutes to 1 hour (more or less depending on the time you have available)
  • Preheat your broiler
  • Remove salmon from marinade and place on a baking sheet lined with aluminum foil and sprayed with nonstick spray. Discard the marinade
  • Broil for 5-7 minutes or until has browned on top and it still dark pink in the middle

For Sesame Noodles

  • Cook your noodles or pasta according to the package directions. Drain and return to the pot. Pour in 1 tablespoon of sesame oil and mix. Set aside
  • In a bowl, combine the soy sauce, vinegar, sugar, and Sriracha.
  • In a skillet over low heat, add ½ Tablespoon of the sesame oil, scallions, ginger and garlic
  • Cook on low heat until the garlic softens. 2-3 minutes
  • Place the garlic ginger mixture on top of the noodles. Pour sauce on top of the noodles. Mix until combined
  • Serve noodles with salmon on top and garnish with sesame seeds and green onions
  • Enjoy!
