Candied Pecan Pear Salad With Pomegranates
This amazing Pear Salad has candied pecans, pomegranates, arugula and is dressed with a simple dijon mustard dressing. With every bite, you will get a little crunch, sweetness, and tanginess.
As a food blogger, I get the same comment always “Wow, your husband is so lucky! He gets to eat gourmet meals every day” Usually I smile and nod because that is far from the truth.
Honestly, I work on this blog for hours, then I have to do daily household stuff and in the afternoon I am dedicated to my girls. So tell me, when can I find the time to wave my magic wand and produce a 4-course meal every night?
We know that everyone wants to eat better, but need inspiration and simple solutions to choose from so they can make it a reality more often.
If you’re a mom you can relate with me, producing nutritious meals on a daily basis is hard, not only are we tired but we also have to be super creative. And yes, the ultimate solution is to plan ahead and write a menu.
I am not a planner, I’m a winger, sometimes is good, most of the times it’s really bad. So basically I open the fridge and cook whatever I have.
Produce and fruit usually go by seasons so this time I had pears and since I love their delicate sweetness and texture, I added it to my salad.
But wait, not all hope is lost. I do have a few cards under my sleeve. Exhibit A: Stouffer’s Family Size meat lasagna. So easy! Just pop it in the oven for 70 minutes and voila… It’s tasty, cheesy and the tomato sauce is perfectly seasoned.

Candied Pecan Pear Salad with Pomegranates
Ingredients
For Candied Pecans
- 2 tablespoons butter
- 2 tablespoons brown sugar
- 1/2 cup pecans
For Salad
- 8 oz dark leafy greens washed and dried
- 1/4 cup pomegranate seeds
- 2 pears cored and sliced
- Candied Pecans
- Salt +Pepper to taste
For Dijon Vinaigrette
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 2 teaspoons Dijon Mustard
- Salt +Pepper to taste
Instructions
For Candied Pecans
- Line a sheet pan with parchment paper
- Place the brown sugar and butter in a saucepan over medium heat until sugar and butter melt
- Add pecans
- Stir for a few minutes or until the pecans are completely coated, about 3-4 minutes
- Pour the mixture into the parchment paper
- Let it completely dry at room temperature
- Break off the pieces when dry
For Dijon Vinaigrette
- Place all ingredients in a small container with a lid. Close container and shake vigorously or until all ingredients are completely combined
For Salad
- In a big bowl, add the leafy greens, the pomegranate, pecans, and pears. Mix
- Slowly add the vinaigrette until the desired flavor is achieved (you may not need all the vinaigrette)
- Serve and enjoy!
