Scrumptious Easy Mini Panettone

This year I decided baked a mini version with candied orange rind pieces and raisins. Definitely scrumptious. If you’re not a fan of these ingredients simply substitute for chocolate morsels, fresh fruit, or nuts.

Using a regular mixer would take about 15 minutes, and the mixer would usually reheat and shut down. Using the Ninja® food processor’s dough blade it took me just 3 minutes.
That’s right – 3 minutes. WHAT A TIME SAVER!

Easy Mini Panettone
Ingredients
For Panettone Dough
- 2 1/4 cups All Purpose Flour
- 1 1/8 teaspoons Instant Yeast Half a packet
- 1/3 cup Warm Milk
- 1/2 cup Sugar plus 1 teaspoon
- 1/2 teaspoon Salt
- 1/2 teaspoon Vanilla Powder *
- Zest of an Orange
- Zest of a Lemon
- 2 large Egg Yolks
- 1/2 cup Butter softened
Fillings*
- 1/2 cup Raisins
- 1/2 cup Candied Orange Peel
Toppings
- Powdered Sugar (optional)
Instructions
- In a small bowl, place the warm milk, 1 teaspoon sugar and yeast. Give it a stir and cover with a clean kitchen towel. Wait 5-10 minutes until the yeast has activated and it has started to foam
- Place the egg yolks, butter, salt, vanilla, zest of orange, zest of lemon, activated yeast mixture and sugar in the Ninja® food processor fitted with the dough blade
- Press the "pulse" button a couple of times to mix the ingredients
- Open the lid and add 2 cups of flour. Close the lid and select the "DOUGH" button. When the cycle is finished, press it one more time
- Open the lid and check if the dough is too sticky. If needed, add the remaining 1/4 cup of flour and select the "DOUGH" button one more time
- Remove the dough ball from the machine. Place it on a greased bowl, cover and let it rise in a warm area for 2 hours
- Remove the dough ball and add the raisins and orange rind. Mix with your hand until everything is combined
- Divide into 4 pieces and shape into a ball
- Place the dough balls into a greased panettone mold or cupcake wrapper
- Cover with a kitchen town and let it rise in a warm area for one hour
- Preheat the oven to 350 degrees Fahrenheit
- Bake your panettones for 20-30 minutes or until the tops have browned
- Cool and sprinkle with powdered sugar
