Mixed Berry Gazpacho
A refreshing smoothie bowl featuring berries, pineapple juice, and yogurt topped with Brazil Nuts.
Perfect breakfast or brunch recipe. Why drink from a straw when eating with a spoon is so much fun? You can add some crunch and whole fruits in the middle for different textures and flavor dimensions.
This mixed berry gazpacho is super easy to make and is perfect for brunch or party. Serve it for Mother’s Day and your whole family will love the intense flavors of berry and citrus. I’d serve it on shooter glasses as well. They would look really cute that way.
To make your Mixed Berry Gazpacho start with beautiful berries, either frozen or fresh, Dole Pineapple juice, apple juice, and yogurt. Easy right?
Your blender does ALL of the work. All you have to do is grab a spoon. The best part is that you can make it advance and serve it when you need to. So if you’re hosting a party you don’t have to run to the blender at the last minute.
I love the intense purple color that the blueberries, blackberries, and raspberries give out. It’s as appealing to the eyes as it is on the palate. When you blend all the ingredients, look how beautiful it comes out of the blender, before adding in the yogurt:

Delicious Mixed Berry Gazpacho
Ingredients
- 1 cup Frozen Blueberries
- 2 cups Frozen Raspberries
- 2 cups Frozen Blackberries
- 1 1/2 cups Pineapple Juice
- 1 cup Apple Juice
- 12 oz Nonfat Mixed Berry Yogurt 2 containers
- 1 Orange peeled, seeded and diced
- 1 Red Apple cored and diced
- 1/3 cup Brazil nuts chopped
Instructions
- Reserve 1/2 cup blueberries. Combine remaining berries, raspberries, blackberries, pineapple juice and apple juice in blender or food processor. Cover; blend until smooth
- Stir in yogurt until blended. Stir in reserved blueberries, orange and apple. Or leave unstirred for garnish
- Cover; refrigerate 2 hours or until chilled. Add nuts and serve
- Enjoy!
