Easy Skillet Peach Cobbler

My 5-year-old is addicted to Peaches and since we’re in season, I buy them by the boatload. This Skillet Peach Cobbler was an improvisation that turned out to be a success.

You see, my little girl wanted peaches on her lunchbox every day, on Thursday she got the flu and stayed at home the rest of the week. Yesterday I looked at the peaches and knew that if I didn’t use them that day they were going to go bad.

And this is how this recipe was created.

What I love about this Skillet Peach Cobbler is that you start out cooking the peaches on the stove and then move the skillet into the oven so the topping can cook and get crisp and delicious.

Just top with some vanilla ice cream and get ready to taste heaven. The secret is to eat them right out of the oven. The inside is creamy, sweet, and super soft while the topping is crispy, buttery, and very flavorful.

Instead of using sugar to create the crisp topping, I used pure maple syrup to give out sweetness and so much deep flavor.

Perfect for peaches or other fruit you may have lying around in the kitchen. It does make a difference, plus it also helps color and caramelize the topping.

Ingredients

For Peaches

  • 5 Peaches sliced and pitted
  • 3 Tablespoons Butter
  • 3 Teaspoons Sugar
  • 1/2 Teaspoon Cinnamon more if you'd like

For Cobbler

  • 1/2 Cup Old Fashioned Oats
  • 1/2 Cup All Purpose Flour
  • 1/4 Cup Pure Maple Syrup
  • 5 Tablespoons Butter at room temperature
US Customary - Metric

Instructions

  • Preheat oven to 375 Degrees Fahrenheit

For Peaches

  • In a cast iron skillet over medium heat, melt the butter
  • Add the peaches, sugar and cinnamon. Cook over medium heat for 3-5 minutes or until softened

For Cobbler

  • Mix all the ingredients together in a bowl
  • Place spoonfuls of cobbler on top of the peaches
  • Bake for 30 minutes or until the crust has browned
  • Serve warm
  • Enjoy
