Today I was craving comfort food. Believe it or not, it was chilly here in Miami this morning. Around 55 Degrees F. For those of you that live up north, this may be nothing but I was freezing and so were my girls when I took them to school.
The car wouldn’t heat up in time and they kept saying “Cold, Cold” Even though they were dressed like they lived in the North Pole, it wasn’t enough.
I am sure when they come home tonight, this picadillo will be exactly what the doctor ordered: sweet, comforting, and filling.
Latin food is all about balancing strong flavors. The raisins and tomatoes give off sweetness while the olives and capers are briny and savory. So with every bite, you will get a melange of flavors in your mouth. I made the sauce on the sweet side to bring all the ingredients together.
You can add any veggies you may like. If you want to get rid of a few veggies that are about to go bad in the fridge, just toss them in there! The picadillo will only get tastier.
