Ingredients
Lime Cream Cheese Mini Bundts
  • 2 1/4 cups All Purpose Flour
  • 1 cup Sugar
  • 8 oz Cream Cheese softened
  • 1/2 cup Butter (1 stick) softened
  • 1 tablespoons Lime Zest
  • Juice of 2 limes
  • 3 large Eggs
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1/4 cup Milk
Lime Glaze
  • 1 1/2 cups Powdered Sugar
  • 3-4 tablespoon Fresh Lime Juice
  • Zest of 1 lime
US Customary - Metric
Instructions
  1. Preheat oven to 350 degrees Fahrenheit 

  2. Grease a the cavities of a mini bundt cake mold 

  3. Mix the flour, baking powder and salt in a bowl. Set aside

  4. In a mixer, mix the cream cheese, butter, and sugar until creamy

  5. Add the lime juice and zest. One by one, add the eggs and mix well after each addition

  6. Add the milk and slowly add the flour mixture. 

  7. Spoon batter into the cavities of each mold until they are 3/4 full. Batter will be thick

  8. Bake for 20-30 minutes or until a toothpick inserted in the middle comes out clean. Remove from the oven and let the cakes cool in the mold for 10 minutes. After 10 minutes unmold onto the cooling rack

Lime Glaze
  1. Place powdered sugar in a bowl. Slowly pour in the lime juice while whisking with a fork. Add the zest

  2. Spoon the lime glaze over the mini bundts

    Does this recipe make 6 mini Bundts if using the same pan as advertised? Do you need to get 2 pans? Recipe says 8 servings?

      Hi Tammy! yes, the recipe makes 8 bundts. My pan had 6, and then I had a little batter left and when the first batch came out I baked the 2 left.
