Low-Carb Broccoli Cauliflower Rice

Ever since I discovered the miracles of cauliflower, I haven’t missed eating rice. As a latin lady, that says a lot. With this Broccoli Cauliflower Rice, you’ll get all the taste and nutrition without the extra carbs.

I’m always trying to sneak vegetables into my kid’s diet without them noticing. Can you see the broccoli in this dish? Yup, me neither. A win for this mommy.

The past December and January was a blessing for me. I was lucky enough to travel on 4 occasions to very different places. Of course, when you travel, you never diet and as soon as I came home, my jeans would not fit.  Time for to cut the fat, the sugar, the carbs, and the fun. 🙁

I’m kidding! There’s lots of stuff I can eat without missing the rice, potatoes, and cake (my fave!). For instance, this delicious Cauliflower Fried Rice, Quinoa Arroz con Pollo, Turkey Picadillo and finally, turkey quinoa one pot meal. Give them a try and you’ll see how awesome they are.

Since my husband and my oldest daughter hate broccoli, I hid it in their “rice” and they ate it all up without hesitation. You’re going to see below how easy it is to make.

If you’re pressed for time, Target and Whole Food sell the cauliflower already “riced”. Next time you’re in those stores, stop by the produce aisle and grab a bag or two. I bought one last week to make cauliflower pizza crust. It was amazing! (recipe coming soon)

Broccoli Cauliflower Rice

This addicting Broccoli Cauliflower Rice recipe requires only 4 ingredients and is so easy to make. Enjoy a low carb side dish that's ready in 20 minutes!

Ingredients

  • 1 large Cauliflower
  • 1 small Broccoli
  • 2 tablespoons Olive Oil
  • 1 teaspoon Garlic powder
  • Salt + Pepper to taste

Instructions

  • Preheat oven to 350 degrees Fahrenheit  
  • Cut the cauliflower and broccoli into small flowerets. Process them in a food processor until they're fine and resemble rice
  • Dump the mixture on a large cookie sheet. Season with salt, pepper and the olive oil. Mix and spread the cauliflower and broccoli on the sheet.  
  • Bake for 10 minutes. Remove from oven and stir. Spread the mixture again and allow to bake for another 10 minutes. Repeat the above process until it begins to golden. 
  • Enjoy!

    Does the baking remove the moisture after using the processor? Can this be frozen for future use?

      Hi Ashley, I would freeze the war processed cauliflower but not the whole dish since the texture may be affected
