What Is Flank Steak?

Flank steak is a lean cut of beef known for its rich flavor and versatility. It works well with marinades and cooks quickly over high heat.

Because flank steak is naturally lean, marinating helps tenderize the meat while adding flavor. The key to keeping it tender is not overcooking it and always slicing it against the grain before serving.

How Long Should You Marinate Flank Steak?

For the best flavor, marinate flank steak for at least 30 minutes and up to overnight.

Short on time? Even 10 to 15 minutes of marinating will add flavor. The longer it sits in the marinade, the more flavorful the meat becomes.

Broiler vs. Grill

This recipe works beautifully under the broiler or on an outdoor grill.

  • Broiler: Fast, convenient, and perfect for weeknights.
  • Grill: Adds smoky flavor and beautiful char marks.

Both methods cook flank steak quickly, usually in less than 10 minutes.

How To Slice Flank Steak

The most important step after cooking flank steak is slicing it correctly.

Always slice flank steak against the grain. Cutting across the muscle fibers shortens them, making each bite much more tender.

Allow the steak to rest for 5 to 10 minutes before slicing to help the juices redistribute throughout the meat.

What To Serve With Flank Steak

  • Roasted vegetables
  • Mashed potatoes
  • Rice pilaf
  • Garden salad
  • Grilled corn
  • Garlic bread

Storage Instructions

Store leftover flank steak in an airtight container in the refrigerator for up to 4 days.

Reheat gently in a skillet or enjoy cold in salads, sandwiches, tacos, or wraps.
