Oreo Cheesecake Brownie Bars
Love Cheesecake? Oreos? Brownies? How about eating them all in one single bite? Yes, heaven exists and it’s inside these delicious and decadent Oreo Cheesecake Brownie Bars. When you eat it, you will feel the fudgy brownie texture, crunchy oreos in between layers, and creamy cheesecake on top. It is truly amazing.
I’ve tried a lot of Oreo cheesecakes before and love the taste. However, I felt the crumby bottom needed something, that’s when I got an Eureka moment – BROWNIES! Nobody can’t resist brownies and better yet when it has a creamy topping. The results were exactly what I expected (which is rare) – a dessert treat that both kids and adults favored.
I used the tiny Oreos in between the layers for these Oreo Cheesecake Brownie Bars because they are easier to cut when ready and look cute. Instead of buying a whole package, I got the ones that come in little cups for the car. That way, I wasn’t tempted to munch the whole package while watching TV. They are just too good.
If you have kids at home, this is the perfect recipe for them to help you cook. Yesterday was teacher planning day at my oldest school. Since she was bored at home, we made these bars. She helped mix, fill, and place the Oreos over the brownies before adding the cheesecake batter on top.

Oreo Cheesecake Brownie Bars
Ingredients
Brownie Layer
- 1/2 Cup semi-sweet Chocolate Chips
- 6 Tablespoons unsalted Butter
- 2 eggs
- 3/4 cups sugar
- 1/2 teaspoon vanilla
- 1/2 cup all purpose flour
- 1/2 Teaspoon baking powder
- Pinch of salt
Cheesecake Layer
- 8 oz cream cheese softened
- 1/4 cup sugar
- 1 egg
- 2 tablespoons sour cream
- 1/2 teaspoon vanilla extract
- 1 cup Mini Oreos
Instructions
- Preheat oven to 350 degrees Fahrenheit
For Brownie Layer
- Line an 8x8" square pan with aluminum foil
- Spray nonstick spray on the bottom and at the sides of the pan
- In a saucepan over medium - low heat, add the butter and chocolate chips. Stir gently until the mixture melts completely. Be careful not to burn the chocolate
- Remove chocolate from pan and pour it in a bowl to cool for 5 minutes. Add the sugar and whisk
- Add the eggs one by one and whisk vigorously
- Add the vanilla, pinch of salt and baking powder. Whisk
- Slowly add the flour and mix until completely combined. Do not Overmix
- Pour the batter onto the 8x8" pan
- Bake for 12-15 minutes or until the top begins to set
- Remove from oven and place 1/2 cup of whole mini oreos (about 12) in rows and columns on top of the brownie layer
For Cheesecake Layer
- In a mixer, add the sugar and cream cheese. Beat on high heat for 2-3 minutes or until creamy
- Using a spatula, clean the sides and bottom of the bowl
- Add the egg and continue mixing
- Add the vanilla and sour cream. Mix until combined
- Place remaining Oreos in a bag. Use a rolling pin, a mallet or a potato masher to break them into smaller chunks
- Add the chopped Oreos into the cheesecake batter
- Pour the cheesecake batter over the brownie layer
- Bake for 16-20 minutes or until center jiggles just a little bit
- Remove from oven and cool completely
- Refrigerate for a minimum of 2 hours
- Cut into squares
- Enjoy!
