Baileys Irish Cream Mug Cake

Yesterday we made Irish Cream cupcakes and today I am showcasing a similar recipe but this one is made from start to finish in 5 minutes or less. This cake is moist and delicious and you will never imagine that it came from the microwave. I soak the warm cake with more Baileys to get the 3 leches texture. Yum!

These mug cakes are alcohol-free since I made them with the Baileys coffee creamer instead of the liquor. You can choose either one depending on your mood. If it’s late at night and you’re craving a freshly baked good, then make this cake. You won’t be sorry.

I serve mine with a dollop of creamy topping and some golden sparkles to celebrate St. Patty’s Day. For this post, I un-molded the cake onto a plate, but normally I would eat inside the mug. The sensation when you dig that spoon into the baileys-soaked cake is awesome.

What I love about mug cakes is that I can whip them up at the last minute and it’ll curb my craving for sweets. Also, since you make a small batch, there are no leftovers and you’ll feel less guilty.

They also work as an instant dessert, imagine if your mother-in-law stops by unannounced. You have to clean the house quickly and also make her a treat before she starts criticizing your decor. In that case, I would give her the Bailey’s liquor and make it a Happy Hour!

If you have a mug, a few ingredients, and a microwave, you got yourself a sweet dessert. My husband and I are currently watching Season 3 of House of Cards, this Baileys Irish Cream Mug Cake will serve as the perfect snack to eat while we watch President Underwood crush everybody around him. Gotta love Netflix.

Ingredients

  • 2 tablespoons unsalted butter melted and cooled
  • 1 large egg
  • 2 tablespoons Irish Cream non-alcoholic
  • 1 teaspoon pure vanilla extract
  • 2 teaspoons granulated sugar
  • 6 tablespoons self-rising flour
  • Pinch of salt
  • Cooking Spray

Topping

  • 2-3 Tablespoons of Irish Cream
  • Whipped Topping
US Customary - Metric

Instructions

  • In a bowl mix the egg, butter, vanilla, salt and sugar
  • Add the flour in 2 batches and mix until combined
  • Divide the mixture in 2 mugs and microwave them separately for about 90 seconds to 2 minutes or until the cake rises and becomes solid (do not overcook)
  • When cake comes out of the microwave, make holes using a fork and pour in the Irish Cream
  • Top with cream and enjoy!
