This Simple Banana Cake Recipe is one of the most delicious banana desserts you will ever try. Filled with so much flavor and goodness, you can’t settle for just one piece.
Perfect to make on a whim, this Simple Banana Cake Recipe is going to be a hit. I just love making it on rainy days with my girls.
I place all the ingredients on the counter and they just mix everything in a big bowl. My 6-year-old is in charge of mashing the bananas.
If you have a few ripe bananas that are about to go bad, they will be perfect for this cake. The flavor will be deep, profound and a will have a dark beautiful color.
On top of this Simple Banana Cake Recipe, I chose to make a delicious brown butter frosting that is creamy, sweet and so delicious. It was hard not to lick the spatula while I was making it.
Both my kids love banana bread and banana pancakes, so I decided to make something different that wouldn’t be complicated. This Simple Banana Cake Recipe is our new favorite! You can add some chopped walnuts, chocolate chips or butterscotch chips if you’d like. You can also choose to make it using a round cake pan so it looks “cakier”.
My daughter is graduation Kindergarten next week and my oldest one will be starting 3rd grade in just a few months. I can’t believe the school year is almost over. Where did time go?
Although I can’t wait for summer to begin. Our lives will slow down a bit and we’ll forget all about homework, early mornings and after school activities.

Simple Banana Cake Recipe
Ingredients
For Banana Cake
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 tablespoons unsalted butter softened
- 1/2 cup sour cream
- 1 large egg
- 1 large overripe banana mashed, or 2 small ones
- 1 tsp vanilla extract
For Frosting
- 3 Tbsp unsalted butter
- 2 cups confectioner's sugar
- 2-3 Tablespoons whipping or heavy cream
- Pinch of salt
Instructions
- For Banana Cake
- Preheat oven to 350 degrees F.
- Line an 8x8" square pan with foil or parchment paper. Spray with nonstick spray
- In a bowl mix the flour, salt, and baking soda
- In another bowl mix the butter and sugars using a mixer on medium-high speed until the butter becomes fluffy. About 3 minutes
- Add the banana, egg, sour cream and vanilla. Mix well
- Finally, add the flour mixture slowly
- Pour the batter into the pan and bake for 35-45 minutes or until a toothpick inserted in the middle of the cake comes out clean.
- Remove from oven and let it cool before frosting
- For Frosting
- Place the butter on a pot
- Melt over medium heat
- When the butter starts boiling, reduce heat to medium-low and stir frequently to prevent from burning
- When the butter starts to smell nutty or you see the milk solids getting darker, remove from heat
- Toss the brown butter, sugar, salt, and heavy cream in the bowl of a mixer
- Mix on medium-high speed for 4-5 minutes or until the frosting becomes creamy and airy. If the mixture seems too stiff, add more cream
- Frost the top of the cake and cut into squares
- Enjoy!
