Turkey Quinoa Stuffed Peppers

This Turkey Quinoa Stuffed Peppers Recipe is comfort food in all its glory. Soft peppers, meaty filling with a delicious and sweet freshly made tomato sauce. Plus how cute is it to serve each one individually?

If you’re hosting a dinner party or entertaining, these stuffed peppers are perfect!

Each guest gets its pepper and serves it with some salad. There’s no need for another side dish since the Turkey and Quinoa are filling.

The idea for making this Turkey Quinoa Stuffed Peppers Recipe came to me a few days ago when my husband suddenly out of the blue told me: “You know, before I met you, I didn’t eat peppers, my mom never used them in her recipes”

I was like “You’ve never had a stuffed pepper?” and he shook his head. I grew up eating a lot of peppers so it was a shock to me. My mom and grandma made them with ground beef and rice, so I made them lighter. Thankfully my invention worked!

These delicious stuffed peppers are lower in fat, and healthy but still satisfying. Although they won’t be on your dinner table in 20 minutes, they are very easy to make. You can make them in advance and just bake them before company arrives or as a weeknight meal.

Below is a step by step picture instructions. It is very important to bake them with the top on, just like making rice with a lid on the stove, the little pepper top will serve the same function and it makes a nice presentation when they come out of the oven.

The process is very simple, make the filling, stuff them inside the peppers, add the sauce underneath, place the peppers on top of the sauce, and bake until ready.

Easy! If you’re not a fan of turkey or Quinoa just use ground beef and rice.

Turkey Quinoa Stuffed Peppers

Ingredients

For Stuffed Peppers

  • 1 lb. Ground Turkey Breast
  • 1 cup quinoa uncooked
  • 1 egg
  • 1 teaspoon Italian seasoning
  • 4 whole peppers
  • salt + pepper to taste

For Sauce

  • 1 teaspoon olive oil
  • 1/2 medium onion chopped
  • 1 can diced tomatoes (or 4 fresh tomatoes diced)
  • 3 tablespoons ketchup
  • salt + pepper to taste
US Customary - Metric

Instructions

For Sauce

  • In a skillet over medium heat, place the oil. Sautee the onions until translucent (4-5 minutes). Add the tomato and cook until softened (5 minutes). Mix in the ketchup, salt and pepper and cook for 2-3 minutes

For Filling

  • Preheat Oven to 350 degrees Fahrenheit
  • Cut the top off the peppers and remove the seeds inside. Save the tops
  • In a bowl, combine the Quinoa, Turkey, Egg, Italian Seasoning, Salt and Pepper and add about 1/2 cup to 1 cup of the sauce. Mix until combined

Assembly

  • Pour the sauce in the bottom of the baking dish
  • Place the stuffed peppers on top
  • Bake for 30-45 minutes or until the turkey and quinoa are cooked. Top with the sauce
  • Enjoy!
