2 Ingredient Banana Bread

You will be floored with how simple this banana bread is. Just 2 simple ingredients and a loaf pan. That’s it! I topped mine off with chocolate ganache but you can certainly omit it and leave it as is. It will be delicious regardless.

So, have you guessed what 2 the ingredients are? I’ll give you a clue: Ben & Jerry’s Chunky Monkey Ice Cream and self-rising flour. If you don’t have this kind of flour in your pantry, don’t worry. You can use regular all-purpose flour, baking powder and salt. I will give you the ratios below.

I LOVE Chunky Monkey ice cream! It has banana ice cream, fudge chunks and walnuts. Ever since I was little, I’ve been addicted this flavor. Plus the name is super cool. See how the chocolate chunks melt inside the bread.

My inspiration for this 2 Ingredient Banana Bread came from a Tasty Video I saw on Facebook last week. It had a different kind of ice cream but it gave you the whole idea. After I saw it, a lightbulb turned on in my brain and it read: Chunky Monkey. Since I am a super fan of banana bread, I was wondering if my idea would work. Surprisingly it did.

This 2 Ingredient Banana Bread is perfect for brunch, breakfast, and even afternoon tea. My girls came home from school to find this yummy treat on the kitchen island and they were super happy. Those 2 slices you see on the pics are all gone and I am sure that after my husband comes home, the banana bread will disappear.

Ingredients

For Banana Bread

  • 1 Pint Chunky Monkey Ice Cream melted
  • 1 1/4 Cups Self Rising Flour*

For Chocolate Ganache

  • 1/2 cup Dark chocolate chunks or chips
  • 1/2 cup Heavy cream
US Customary - Metric

Instructions

  • Preheat oven to 350 degrees Fahrenheit
  • Line the loaf pan with parchment paper
  • Grease a loaf pan with nonstick spray
  • In a bowl place the melted ice cream. Stir with a wooden spoon
  • Slowly add the self-rising flour until completely combined. Do not overmix
  • Pour batter on the loaf pan
  • Bake for 38-40 minutes or until a toothpick inserted in the middle comes out clean
  • Remove from oven and let it rest on cooling rack for 10 minutes
  • Remove from loaf pan and let it completely cool
  • For ganache
  • Place chocolate in a bowl
  • Heat the heavy cream on the microwave
  • When the cream boils, pour it over the chocolate
  • Let the mixture rest for 2 minutes to allow the chocolate to melt
  • Mix with a whisk until combined
  • Pour over cooled bread
  • Let it set before slicing

Notes

*If you don't have self-rising flour, you can replace with all purpose flour using these measurements:
Per 1 cup of self-rising flour use:
1 cup of all purpose flour
1 1/2 teaspoons of baking powder
1/2 teaspoon of salt
