Rhubarb Mojito
I don’t know about the rest of the country, but here in Miami, it’s hot. Not a little hot, not your average “get on the shade hot”, it’s scorching hot everywhere.
If you’re not submerged in a body of water, you need to ingest a lot of it, and since sometimes water can be boring I turn to a delicious sweet-tasting Rhubarb Mojito. If you’re not a fan of alcohol you can make it virgin.
You may be wondering why I chose to make it with Rhubarb. Out of all the fruits that would go great with a Mojito, I chose the most unusual one. To be honest, my mom had this weird craving for Rhubarb Compote. She usually buys it and cooks it with water and sugar until the rhubarb breaks down and becomes saucy.
She couldn’t find it anywhere so she called a lady that would only sell her a minimum of 3 lbs. We sat down this weekend trying to figure out what to do with all that excess Rhubarb and then the Miami heat got to me and instantly said: “Rhubarb Mojito”
This Rhubarb Mojito is made with the juice that came out of the compote. All you do is simply cook the rhubarb chunks in water and sugar (or stevia) for 10-15 minutes and you’ll see how beautiful it starts to break down by itself. Then I strained some of the juice that came out of the compote and the pink gold became the base for this delicious Mojito.
The complex flavor of the rhubarb, combined with the fresh mint and the citrusy lime is gold. For parties and get-togethers, make a giant pitcher with lots of mint, sugar, soda water, and lime juice and it will surely be a hit. To make it an authentic mojito, I chose White Rum but you can certainly serve it virgin or with vodka.
I love how the cute Rhubarb Sticks double as a stirrer. They make this drink look chic and elegant. It’s a bubbly drink fit for the summer! Guess it’s the only way to survive the Miami weather 🙂
Rhubarb Mojito
Ingredients
For Mojito
- Juice of 2 limes
- 2 Teaspoons Sugar
- 15 leaves Mint
- 1 Part white rum optional
- 3 Parts of club soda
- 1 Cup of Rhubarb Juice*
- Ice
For Rhubarb Juice
- 1 Lb Rhubarb cut into chunks
- 1/4 Cup Sugar or more if needed
- 1 cup Water approximately
Instructions
For Rhubarb Mojito
- Using a mortar or a regular bowl, add the mint and sugar and "bruise it" using a pestle or a spoon so the mint releases the delicious aroma. Pour in the lime juice and mix
- Divide this mixture between 2 glasses
- Add 1/2 Cup of Rhubarb Juice into each glass
- Add one part of rum and enough ice to cover 3/4 of the glass
- Pour in the club soda and garnish with a Rhubarb stick and a mint leaf
- Stir and enjoy!
For Rhubarb Juice
- Add rhubarb and sugar into a large pot. Pour in enough water to cover it
- Cook on medium low-heat for 10-15 minutes or until the rhubarb breaks down
- Test for seasoning and if necessary add more sugar
- Remove from heat and let it cool
- Strain
