These delicious Potato Chip Cookies are sweet and salty at the same time with a nice butterscotch flavor in the background. Perfect as a snack, or on the go for road trips this summer.
Incredible Butterscotch Potato Chip Cookies
Yup, I did it.
I finally baked some cookies with potato chips. It may sound strange to some, but after you try these and taste the combination of butterscotch and potato chips, you’ll be saying: why didn’t I think of this before?
It’s true, the combination is perfect, not too sweet, not too salty. And every bite has layers of flavors. That’s what butterscotch does.
On the other hand, the potato chips stay crunchy inside the cookie, while providing that surprising edge of flavor when you first take a bite.
My secret? Never crush those beautiful Lay’s Classic Potato Chips. Keep them in small pieces to fit the inside of the cookie but be delicate when adding them to the cookie dough.
Now that summer is here I’m concocting some treats to take on the go so we can enjoy it everywhere without worrying about spoiling, damaging, or melting.
Here in Miami, these Potato Chip Cookies are perfect to take to the beach, pool, park, road trips, and even airplanes. For the beach, I simply use a bag clip to keep together a baggie of cookies and Lay’s Potato chips for each kid and a big fruit like an apple or pear.
My girls can eat one in the car and that’ll distract them for 5 minutes before asking again “When are we getting there?”

Trust me on this one, it works 😉 Just remember to use classic flavor and not venture out and add the BBQ or Sour Cream & Onion. I couldn’t vouch for those cookies.

Butterscotch Potato Chip Cookies
Ingredients
For Cookies
- 2 1/4 cups All Purpose Flour
- 1 teaspoon Baking Powder
- 1/2 teaspoon Salt
- 2 1/2 cups tablespoons Brown Sugar
- 1 cup Unsalted Butter softened
- 1 teaspoon Pure Vanilla Extract
- 2 large Eggs
- 1 1/2 cups Butterscotch Chips
- 1 1/2 cups Lay's Original Potato Chips
Topping (optional)
- 1/4 cup Lay's Original Potato Chips crushed
Instructions
- Preheat Oven to 400 Degrees Fahrenheit
- In a bowl, place the flour, baking powder and salt. Mix until combined
- In a mixer bowl place the butter and brown sugar. Mix on medium speed for 3-4 minutes or until the mixture becomes creamy and fluffy. Scrape down the sides of the bowl with a spatula
- With the mixer running, add the eggs one at a time and the vanilla
- Slowly add the flour mixture. Scrape the sides of the bowl with a spatula
- Finally, add the butterscotch chips
- Remove from mixer and add the potato chips. Using a spatula, mix the chip in the cookie dough being careful not to crush the chips
- Using an ice cream scoop or spoon, place mounds of cookie dough onto a cookie sheet lined with parchment paper
- Top each cookie with crushed potato chips
- Bake the cookies for 7-10 minutes or until brown at the edges but still soft in the center
- Remove from oven and let them cool on a cooling rack
- Enjoy!
