Amazing Fruity Pebbles Rice Cakes Sandwiches

Tired of giving the same ol’ boring after school snack to your kids?

Me too..

Help to brighten their day by baking a few batches of these yummy Amazing Fruity Pebbles Rice Cakes. Make them any size and shape you may like and top them with crunchy Fruity Pebbles cereal.

Not a fan of fruit jam and cream cheese? OMIT THEM! and substitute with nut butter, fruit spread, mascarpone cheese, marshmallow puff, etc.

I chose to do them in donut shape since they are fun and my girls love them, if you don’t have a donut mold, use a muffin pan.

I don’t know about yours, but my kids come home from school absolutely starving. According to them they haven’t eaten all day and attempt to raid my whole kitchen by eating everything on sight.

 

To avoid my poor kitchen being assaulted, I make some snacks that they can eat while doing their homework. Usually it’s fresh fruit, half a bagel, or homemade yogurt.

Lately, they’ve complaining about the variety of their snacks, so I decided to give their regular rice cakes a makeover by adding some Fruity Pebbles cereal on the batter to give it a beautiful color, a citrusy flavor, and a nice sweetness.

For the topping, I chose to balance the flavors as well by spreading some tangy cream cheese, sweet jelly, and crunchy (delicious) Fruity Pebbles cereal.

This snack has earned me the title of “The Best Mom Ever” – according to my daughters.

Crossing my fingers this title lasts until the next snack time. 🙂

Fruity Pebbles Rice Cakes Sandwiches

Ingredients

For Fruity Pebbles Rice Cakes

  • 1 cup Fruity Pebbles Cereal
  • 1 cup Uncooked Rice
  • 2 Eggs
  • 1 1/2 cups Water
  • 1 teaspoon Vanilla
  • 1/4 teaspoon Salt

For Rice Cake Sandwich

  • 1/2 cup Cream Cheese
  • 1/2 cup Jelly
  • 1 cup Fruity Pebbles Cereal
US Customary - Metric

Instructions

  • Preheat oven to 350 Degrees F
  • Grease a donut mold, or muffin pan
  • In a food processor, pulse the uncooked rice and cereal together until ground
  • Add the eggs, water, vanilla, and salt and pulse until combined
  • Pour the batter in the mold filling only 1/4 halfway 
  • Bake for 20-21 minutes or until crunchy
  • Unmold on a baking rack and cool completely 

Assembly

  • Spread cream cheese and jam in the bottom of a rice cake
  • Top with cereal
  • Place another rice cake on top
  • Enjoy!

Notes

Rice Cakes can be kept in a sealed food container at room temperature for 3-4 days
