Baked Oatmeal with Berries
Believe it or not, this breakfast is actually good for you. Normally, baked oatmeal is made with full fat milk, melted butter, and sugar.
However, I substituted all those ingredients for healthy ones and still managed to produce a moist and delicious baked oatmeal that has various textures to entertain your palate and keep you full all morning.
Making it is super easy: just throw everything into a bowl, pour over a dish and bake. It takes less than 5 minutes from creation to oven.
You can make it during the weekend, leave in the fridge and just heat it up during the week. Fresh out of the oven or reheated later, it still tastes so warm and inviting.
Plus, you can add or subtract your favorite ingredients. I used berries, walnuts, and lime zest to make this dish pop because the zest lifts it up nicely.
You can substitute with any other nut or simply omit that component. If you’re a fan of orange or lemon simply use those in the recipe.
Not a fan of berries? Substitute them for sliced apples, pears, peaches, etc. You can also add some cinnamon, nutmeg, allspice, or even ginger.
If you’d like your squares a bit thinner use a bigger baking dish. I just love digging my fork into the oatmeal… so yummy!

If the Extra Savings flyer is not located in the kiosk at the store’s entrance, ask customer service for a flyer. You can also look out for the at shelf signs located throughout the store that will highlight all of the savings happening during the promotion.
Baked Oatmeal with Berries
Ingredients
- 2 cups Low Fat Milk*
- 1/3 cup Eggland’s Best Liquid Egg Whites
- 2 teaspoons Baking Powder
- Pinch Salt
- Zest of 1 Lime
- 2 teaspoons Vanilla
- 3/4 cup Skinnygirl Preserves
- 1 1/2 cups McCann’s Quick & Easy Oatmeal
- 1 cup Fisher Chef’s Naturals Walnuts, slightly chopped
- 2 cups Mixed Berries
Instructions
- Preheat oven to 350 degrees F.
- Grease an 9×9" square pan.
- In a bowl whisk the milk, egg whites, zest, vanilla, baking powder and salt.
- Warm up the preserves for 20 seconds in the microwave (this will make it easy to incorporate in the recipe).
- Add the preserves, walnuts and oatmeal. Mix.
- Pour the mixture in the prepared baking pan.
- Sprinkle the berries on top.
- Bake for 25-35 minutes or until browned on top.
- Enjoy!
