These delicious and easy-to-make chewy butter toffee cookies are baked with heath bar bits to make them irresistible. A must recipe for any party or event. Some of the bits melt and convert into caramel creating an amazing nutty flavor.
Summer is around the corner and my daughters are looking forward to summer camps, long days, and sleeping late at night. Cookies are the perfect after-camp snack idea. Since my oldest doesn’t like chocolate I decided to make something that she will love: Butter Toffee Cookies.
The inspiration for this recipe came from my husband. Near our house there’s a fancy supermarket called “The Fresh Market” and they sell these amazing toffee cookies. My husband goes crazy for them and through a little experimentation, I was able to recreate it. Luckily the recipe turned up delicious.
You can make a double batch of these Butter Toffee Cookies and then freeze the dough and bake them at a moment’s notice. If you see my freezer, you’ll see tons of baggies full of cookie dough.
When my girls have playdates or people come over I can just thaw them and bake. It’s an easy way to always have fresh baked cookies. This is what makes me the most popular mom among my daughter’s friends.
And here’s a great tip: use an ice cream scoop to place the cookie dough into the cookie sheet. That way they will bake uniformly and have about the same size. Plus it’s less messy! You can also use a spoon, your hands or whatever you may like.
I am really proud of how these Butter Toffee Cookies taste. My husband took a bite and loved it. To me, that was all I needed to know these were a home run.

Butter Toffee Cookies
Ingredients
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 8 oz Heath toffee bits or Skor
- 2 1/2 cups light brown sugar
- 1 cup unsalted butter at room temperature
- 1 teaspoon vanilla
- 2 large eggs
Instructions
- Preheat Oven to 375 Degrees Fahrenheit
- In a bowl, place the flour, baking powder and salt. Mix until combined
- In a mixer bowl place the butter and brown sugar. Mix on medium speed for 3-4 minutes or until the mixture becomes creamy and fluffy. Scrape down the sides of the bowl with a spatula
- With the mixer running, add the eggs one at a time and the vanilla
- Slowly add the flour mixture. Scrape the sides of the bowl with a spatula
- Finally add the toffee bits. Do not overmix
- Using an ice cream scoop or spoon, place mounds of cookie dough onto a cookie sheet lined with parchment paper
- Bake the cookies for 8-10 minutes or until brown at the edges but still soft in the center
- Remove from oven and let them cool on a cooling rack
- Enjoy!
