Chia Pudding With Berry Sauce
This Chia Pudding With Berry Sauce is healthy, easy, and the perfect perfect breakfast for a busy day. Make everything the night before and mix it in the morning. I like to heat my berry sauce. The sweet and tartness along with the creamy pudding makes me feel like I am eating a dessert or a parfait even.
I sprinkle my chia on top of everything: yogurt, smoothies, even bars. Last year I discovered how to make it into a pudding and love coming up with different variations. You can even add some nuts on top for crunch. Berries are in season during the summer so I love to use them in everything I can.
The berry sauce can be saved and used for desserts, breads, etc. But the combination with the chia pudding is my favorite. It’s cool how the innocent pudding meets the rebel sauce.. mix it and you’re in heaven!
Breakfast in my house is always in a hurry. I will admit that sometimes I don’t make the best nutrition decisions. So with this Chia Pudding, I know I can get something quick, indulging, and more interesting than yogurt. My husband loves it too! Now I have to fight to be quick in the morning before he steals them from me.

Chia Pudding With Berry Sauce
Ingredients
For the Pudding:
- 4 cup almond milk your choice
- 3/4 cup Chia seeds
- 1/2 cup honey or sweetener of choice
For the Berry Compote
- 1 cup frozen berries fresh works too
- 1 tsp fresh lime juice
- 1/4 cup sugar
- 1 tsp cornstarch
Instructions
For the Pudding:
- Mix all the ingredients, stir and allow to sit in the fridge overnight or for at least 3 hours
For the Berry Sauce (Compote)
- Add all the ingredients to a medium saucepan over medium heat and bring it to a boil
- Reduce heat and allow to simmer for 5 minutes (for fresh berries)
- Stir frequently. Once all the fruit has broken apart and the sauce has thicken, remove from heat Allow to sit for 10 minutes
- Mix the berry sauce with chia pudding or use sauce over ice cream, yogurt or even pancakes!
