Classic Lemon Madeleines Cookies

There’s nothing more delicious than a soft, citrusy, cakey cookie sprinkled with confectioners’ sugar. It’s perfect to dip in tea, coffee, and even hot chocolate.

I’m a purist and enjoy these Classic Lemon Madeleines by themselves. They’re moist, and oh so flavorful. My daughter, on the other hand, suggested we dip the tips in melted chocolate. I promised her we’ll do it with the next batch.

 

If you’re looking for an inexpensive but awesome Holiday gift, place these cookies inside a festive tin and they will definitely do the trick. Who wouldn’t love receiving these? Perfect for kids’ teachers, mailman, co-workers, friends, etc.

We, of course, enjoyed their food. But our favorite part was the patisserie. Now my husband says he won’t look at desserts the same way ever again. The bar is high, and that inspired me to bake a batch of these Classic Lemon Madeleines Cookies.

Each bite has so much flavor with a bright citrusy aroma that having just one is almost impossible. Believe me, I’ve fallen into temptation a few times.

And did I mention it? These are super easy to whip up, and you can double or even triple the batch without any trouble. The only special equipment needed is a Madeleine pan. If you don’t have it, simply use a mini muffin pan.

Ingredients

  • 2 Eggs
  • 1/4 cup Unsalted Butter
  • 3/4 teaspoon Vanilla or Lemon Extract
  • 1/8 teaspoon Salt
  • 1/3 cup Sugar
  • 1/2 cup Flour sifted
  • 1 tablespoon Lemon Zest
  • 1 tablespoon Orange Zest
  • 2 tablespoons Confectioners Sugar to dust
US Customary - Metric

Instructions

  • Preheat oven to 375 degrees F
  • Prepare molds with butter and dust with flour. Melt butter, and allow to cool to room temperature. 
  • Beat eggs, vanilla and salt until frothy. Gradually add sugar while beating for 8 to 10 minutes. Mixture will form ribbons when you lift the beater
  • Fold flour 1/3 cup at a time into egg mixture. Add both zests. Pour melted butter over batter and gently fold until well combined. 
  • Scoop batter into molds, bake around 15 minutes, until cake is golden brown around edges. Don't over bake, it may cause cookies to become too dry. 
  • Remove from molds to cooling rack and dust with confectioners’ sugar.
