Easy Homemade Mascarpone Cheese

There’s something so satisfying about making your own cheese at home. Not only is this homemade mascarpone cheese incredibly easy, but it also tastes fresher, creamier, and more luxurious than anything you’ll find at the store.

Even better, it only requires two simple ingredients and a little patience.

What Is Mascarpone Cheese?

Mascarpone is a rich Italian cream cheese known for its silky texture and mild, slightly sweet flavor. It’s the key ingredient in classic desserts like tiramisu, but it’s also amazing in savory dishes like pasta, risotto, and spreads.

Because it’s made from cream instead of milk, mascarpone has a much higher fat content, which gives it that signature smooth and creamy consistency.

Why Make Mascarpone at Home?

  • More affordable than store-bought
  • Only 2 ingredients needed
  • No preservatives or additives
  • Incredibly fresh and creamy texture
  • Perfect for both sweet and savory recipes

Ingredients You’ll Need

  • Heavy cream
  • Lime juice (or lemon juice)

That’s it. Simple and effective.

How To Make Homemade Mascarpone Cheese

The process is easier than you think and requires minimal hands-on time.

Step 1: Pour the heavy cream into a saucepan and heat gently over medium-low heat until it reaches about 185°F (just before boiling). Stir occasionally.

Step 2: Remove from heat and stir in the lime juice. Let the mixture sit for 5–10 minutes until it thickens slightly.

Step 3: Line a colander with cheesecloth and place it over a bowl.

Step 4: Pour the mixture into the lined colander, cover, and refrigerate for 12–24 hours to allow it to drain and thicken.

Step 5: Once thickened, transfer to a container and refrigerate until ready to use.

And that’s it. Your mascarpone is ready!

Tips for Best Results

  • Do not boil the cream — keep it just below simmering
  • Use fresh lemon or lime juice for the best results
  • Allow enough draining time for proper thickness
  • The longer it drains, the thicker it becomes

How To Use Mascarpone Cheese

This creamy cheese is incredibly versatile.

  • Spread on toast or crostini
  • Use in tiramisu and desserts
  • Add to pasta or risotto
  • Mix into mashed potatoes
  • Use in frostings and fillings

Storage

  • Store in an airtight container in the refrigerator
  • Best used within 3–4 days
  • Do not freeze, as the texture may change

Yes, it has less butterfat than heavy cream but it should work fine

Hi – this is the first marscapone recipe I’ve seen which doesn’t need heating. Does it still keep and taste the same ?
