Fluffy Instant Pot Pancakes

What CAN’T this Instant Pot do?

It’s so versatile when it comes to cooking. Now it’s flipping pancakes for me while I’m in bed drinking coffee. How cool is this?

You can make the batter right then and there or beforehand and kept in the fridge. All depends on your time constraints.

Made with chocolate chunks, these fluffy Instant Pot Pancakes are the perfect fun & delicious breakfast recipe served with maple syrup

The IP makes one BIG pancake that is enough for a family of 4 (or 3 depending on their appetites). Everybody can have their own  wedge.

Enjoy these airy Fluffy Instant Pot Pancakes with your favorite topping, it can be jam, syrup, cream, powdered sugar or fresh fruit.

We added chocolate chunks into ours but you can certainly omit them or replace with chips, berries, banana slices, etc.

Here’s how the process goes:

Line your springform pan with parchment paper (to prevent the pancake from sticking)

Then we mix the batter in a bowl and add the chocolate chunks. You can replace with chips if you’d like.

Pour the batter into a springform pan that is lined on the outside with foil (this will prevent water from seeping in).

And we pressure cook them using the trivet and a aluminum sleeve (for easy removal of the cake pan once the pancake is ready).

Ingredients
  • Box Pancake mix your favorite brand
  • 1/4 cup Chocolate Chunks
Instructions
  1. Follow the directions on the box of the pancake mix. Add chocolate chunks and whisk lightly

  2. Line the bottom of a  7″ inch springform pan with parchment paper and with spray with nonstick spray. Line the outside bottom and sides with foil

  3. Pour batter into the pan 

  4. Cover pan with foil

  5. Make a sling with aluminum foil: Break a long piece of foil and fold into 3. The idea is to get a long thin rectangle (helps remove the pancake from the instant pot quicker)

  6. Pour 1 1/2 cups of water in the instant pot. Place trivet on top

  7. Cook on manual high pressure for 30-35 minutes (30 MHP)

  8. Do a quick release

  9. Remove from IP, top with your favorite ingredients and enjoy!

    It would be helpful to actually have a quantity of box pancake mix. I assume you mean a product like Bisquick but how many servings are you making? Four servings of Bisquick for 4 servings of this?

      Hi Shirlsaw! I am so sorry for the confusion. A 32 oz box of pancake mix, could be Aunt Jemima or Bisquick. I use the whole mix to make a giant pancake that is perfect for a family of 4 or 5.

    From the picture it appears the pancake mix is covered by tinfoil but the directions do not say to cover it while baking. I want to try this recipe with Kodiak Cakes brand pancake mix, Did you cover it or leave it open while cooking?
