Homemade Hamburger Buns + Ultimate burger recipe
When it comes to burgers usually people spend a lot of time on beef patties, sauces, and toppings. But they neglect to forget one of the most important components: the BUN. It represents 1/3 of the burger.
Store-bought hamburger buns are not fresh, tend to get mushy fast, and it doesn’t have a distinctive taste. When you bake your own, it makes a difference. Homemade buns are big, sturdy, and have a delicious fresh-baked taste.
I’ll admit, bread baking takes a few hours until they are ready. But I usually make a huge batch and freeze them. To defrost, just leave them on the counter and then bake or toast for 15 minutes if you prefer them warm. This is what they looked like before going in the oven:
I love topping them with sesame seeds, but poppy seeds, onion flakes, or sea salt, would make them delicious as well. My daughters prefer them plain. So you can customize it to your taste.
The secret is to knead your dough until it becomes smooth and elastic. If you use the hook attachment on your mixer it will take from 7-10 minutes. When kneading, the dough starts as sticky and then becomes easier to handle. That’s a good indication that the gluten has developed and is ready to start the first rise.
As for the burger itself, I made an amazing spicy relish mayo sauce that compliments the beef patty very well. It hits all your major flavors: sweet, sour, salty, and spicy.
The amazing flavor of the sauce comes from Tabasco. Whenever you make a sandwich/burger sauce, it is an essential ingredient.
Homemade Hamburger Buns
Ingredients
For Homemade Hamburger Buns
- 22 oz Bread Flour by weight
- 1 packet Instant Yeast
- 1 1/2 teaspoons Salt
- 2 teaspoons Sugar
- 1 Egg
- 13 oz Whole Milk lukewarm
- 3 tablespoons Unsalted Butter room temperature
- 1 Egg for the top
- Sesame Seeds optional
For Spicy Mayo Sauce
- 3-4 dashes Tabasco Sauce add more or less to your taste
- 6 tablespoons Mayonnaise
- 1 tablespoon Pickle Relish
- 1 teaspoon Sugar
- 1/2 teaspoon White Vinegar
- 1/2 teaspoon Salt
- 1/2 teaspoon Paprika
For the Ultimate Burgers
- 12 patties Chop House by Holten Steak Burger Patties frozen
- 12 slices Borden Singles Sharp Cheese
- Tomato slices optional
- Onion Slices optional
- Pickle Slices optional
Instructions
For Homemade Hamburger Buns
- In the bowl of a mixer fitted with a dough hook attachment, add the flour, sugar, salt, and yeast. Mix for 10 seconds.
- Add the egg and milk and mix on medium speed until the ingredients start to come together. Finally add the butter.
- Mix for 7-10 minutes or until the dough becomes smooth, elastic and is not sticky.
- Place dough into a greased bowl, cover and let it proof for 90 minutes.
- When the dough has risen, divide into 3.5 oz portions. Shape them into and place in a baking sheet lined with parchment paper.
- Cover with a towel and let it proof for 30 minutes.
- Preheat oven to 400 degrees F.
- Whisk the egg and brush it on top and sides of the rolls. Sprinkle with sesame seeds.
- Bake for 13-15 minutes or until browned on top.
For Spicy Mayo Sauce
- Mix all the ingredients in a bowl. Taste and adjust seasoning if necessary.
For the Ultimate Burgers
- Cut the rolls in half and toast.
- Cook the beef patties according to the box instructions. When they are ready top them with cheese.
- Place the cheeseburger on top of the patty, add the sauce, veggies, and top with the other half of the bun.
