Lemon Parmesan Quinoa Salad

If you’re into warm salads, then you’re going to love this one!

It’s hearty, filling, full of flavor, and super easy to make.

You can serve alongside a protein or add slices of cooked chicken, beef, or shrimp.

The weather has been cold lately, even here in Miami believe it or not, so I crave comfort food.

Since it’s January, I avoid making casseroles due to their high caloric content. This delicious Lemon Parmesan Quinoa Salad gives me that warm feeling without the guilt.

I make quinoa often and have cooked quinoa in my fridge at all times. It saves me time and with it, I can make a plethora of dishes.

Now I can add another recipe to my quinoa dishes. This one is made with Kale in a delicious lemon vinaigrette.

This one I tried in a restaurant in Wynwood and I got hooked! As soon as I got home I had to reproduce it.

After a few tweaks, this recipe was complete. You can use veggie that’s about to go bad in the fridge. All of them work so well with this aromatic lemon vinaigrette.

Ingredients

  • 2 cups Quinoa, cooked
  • 1/2 bunch Kale, stems removed and leaves chopped
  • 1 head Broccoli, chopped
  • Juice of 1 Lemon
  • 1/3 cup Parmesan Cheese, shredded
  • 1/2 Red Onion, chopped
  • 1 teaspoon Garlic, minced
  • 1/4 cup Water

Instructions

  • In a large skillet, begin to heat oil. Add chopped onions, broccoli and garlic. Sauté until slightly tender.
  • Add chopped kale, along with 1/4 cup of water. Lower heat and cover.
  • Cook for 2-3 minutes, oruntil kale has wilted and turned bright green
  • Stir in cooked quinoa, lemon juice and parmesan cheese.
  • Remove from heat and serve immediately.
