Honey Mustard Sheet Pan Salmon And Broccoli

Isn’t it hard to start work and school right after the Holidays?

During December, we were invited to many Holiday parties, I was focused on cooking, family, shopping, and having fun.

When I came back from vacation my workload was huge, my girls started school, and our whole routine hit me like a ton of bricks.

I think I need another break.

While I wallow in my sorrow, my family needs to eat.

So part of my New Year’s resolution is to focus on serving more sustainable fish for my family like this yummy Honey Mustard Sheet Pan Salmon And Broccoli.

I used an array of colorful veggies to give my dish a fun and festive theme.

Since my girls tend to eat with their eyes, I chose broccoli and cherry tomatoes. and tricolor baby carrots. You can, of course, use any veggie you have in your fridge. Green Beans, red potatoes, onions, peppers, squash, zucchini, and asparagus are also additions to this dish.

Sheet Pan dinners are the best since the whole meal cooks in one pan all at the same time. Less messy and more convenient.

The sauce is a tangy honey mustard that compliments the salmon nicely.
