Honey Mustard Sheet Pan Salmon And Broccoli

Isn’t it hard to start work and school right after the Holidays?

During December, we were invited to many Holiday parties, I was focused on cooking, family, shopping, and having fun.

When I came back from vacation my workload was huge, my girls started school, and our whole routine hit me like a ton of bricks.

I think I need another break..

While I wallow in my own sorrow, my family needs to eat.

So part of my New Year’s resolution is to focus on serving more sustainable fish for my family like this yummy Honey Mustard Sheet Pan Salmon And Broccoli.

I used an array of colorful veggies to give my dish a fun and festive theme.

Since my girls tend to eat with their eyes, I chose broccoli, cherry tomatoes. and tricolor baby carrots. You can, of course, use any veggie you have in your fridge. Green Beans, red potatoes, onions, peppers, squash, zucchini, and asparagus are also additions to this dish.

Sheet Pan dinners are the best since the whole meal cooks in one pan all at the same time. Less mess and more convenient.

The sauce is a tangy honey mustard that compliments the salmon nicely.

My last shortcut is the best, for the protein I used Gorton’s Grilled Salmon Classic . It’s so easy! Just open the package and place the filets right on the pan.

Each serving of salmon has 15 grams of protein and 90 calories.

Ingredients
  • 2 boxes Gorton's Grilled Salmon Classic frozen
  • 1 cup Cherry Tomatoes
  • 1 cup Baby Carrots
  • 2 cups Broccoli Florets
  • 1/4 cup Olive Oil
  • Salt + Pepper
  • 3 teaspoons Garlic Powder
For Honey Mustard Sauce
  • 1 tablespoon Stone Ground Mustard
  • 2 teaspoons Honey
  • 2 teaspoons Soy Sauce
  • 1 Garlic Clove minced
  • 1 teaspoon Lemon Juice
  • Salt + Pepper
Instructions
  1. Preheat oven to 400 degrees Fahrenheit

  2. Grease a sheet pan

  3. Place broccoli in sheet pan. Add 2 tablespoons of olive oil, 1 teaspoon garlic powder, salt, and pepper. Toss to coat

  4. In a bowl, mix the tomatoes with 1 tablespoon of olive oil, 1 teaspoon garlic powder, salt, and pepper. Toss to coat and add to sheet pan

  5. In the same bowl, mix the tomatoes with 1 tablespoon of olive oil, 1 teaspoon garlic powder, salt, and pepper. Toss to coat and add to sheet pan

  6. Place the 4 frozen salmon filets in the sheet pan and bake for 10 minutes

  7. In the meantime, mix sauce ingredients in a small saucepan and boil for 4-5 minutes or until reduced

  8. After the salmon has been there for 10 minutes, add the sauce on top and bake for 10 more minutes

  9. Remove from oven and enjoy!
