Slow Cooker Lasagna Recipe

Now that summer is upon us, ditch the oven and use your slow cooker. It will make your house smell delicious without heating the kitchen. This Slow Cooker Lasagna Recipe is perfect to feed your family without much effort.

Come home from work to a delicious and cheesy home-cooked meal that waits for you. The result is moist, delicious, hearty, and filling. I love the leftovers because the lasagna tastes great the next day.

This Slow Cooker Lasagna Recipe has 4 layers full of beef, sauce, ricotta, and cheese. Each piece is tall and hearty. Serve it alongside a quick green salad or steamed veggies for a complete meal.

I am planning on making this Lasagna for potlucks! I can simply take my crock pot and plug it in when needed. People can serve themselves straight from the pot so cleanup is a breeze.

You can also add some veggies, sausage, and different kinds of cheeses to this dish. It’s easily customizable and adapts to any changes.

I am looking forward to cooking less and enjoying my summer outside. The weather in Miami right now is gorgeous. Not humid yet, so  I want to be in the pool and beach as much as possible before the degrees climb any higher.

Having dinner cooking by itself while I’m outside enjoying the sea breeze is priceless. That’s what summer is all about! One more week of school and then we’re off.

Summer camp starts at the end of the month so it gives us plenty of time to be together and enjoy longer days.

Slow Cooker Lasagna Recipe

Ingredients

For Beef

  • 1 lb Lean ground beef or ground turkey
  • 1 teaspoon Italian seasoning
  • 1-2 cloves garlic minced
  • 2 - 15 oz cans of crushed tomatoes
  • 1/2 teaspoon sugar or Stevia
  • 1 cup water
  • 1 onion chopped
  • Salt + Pepper
  • 2 teaspoons Olive Oil

For Cheese

  • 1 cup Mozzarella Cheese
  • 15 oz Ricotta Cheese
  • 1/2 teaspoon Italian Seasoning
  • Salt and Pepper

Assembly

  • Lasagna Noodles uncooked
  • 3 cups Mozzarella Cheese
  • Fresh Basil
US Customary - Metric

Instructions

For Beef

  • Heat skillet with olive oil on medium heat
  • Add onions and Italian Seasoning. Saute until softened
  • Add garlic and cook for 1 more minute
  • Add beef and cook while breaking it down into small pieces
  • Drain excess liquid
  • Add tomatoes, sugar, salt and pepper. Cook for 2-3 minutes or until the mixture starts to boil
  • Add water and cook until the sauce is thick but still a bit runny. Check for seasoning

For Cheese

  • Mix everything into a bowl. Check for seasoning

Assembly

  • Spray the inside of your slow cooker with non-stick spray
  • Add 1/4 of the meat mixture
  • Cover with lasagna noodles (you might need to break them up a bit so that they fit)
  • Add 1/3 of ricotta mixture, top with 1/4 beef and 1/3 cheese
  • Cover with lasagna noodles
  • Add 1/3 of ricotta mixture, top with 1/4 beef and 1/3 cheese
  • Cover with lasagna noodles
  • Add 1/3 of ricotta mixture, top with 1/4 beef and 1/3 cheese
  • Cover with lasagna noodles
  • Add 1/3 cup of cheese
  • Cover with lid and cook on low for 4-5 hours
  • Uncover and add 1 cup of cheese
  • Cover for 5-10 or until cheese is melted
  • Top with herbs
  • Enjoy!
