Homemade Dinner Rolls

Grab and pen and paper because you might want to jot this Homemade Dinner Rolls recipe down. These guys are fantastic, buttery, easy to make, and a crowd-pleaser.

You might think that these rolls will make you spend hours in the kitchen but I have a very cool method to reducing the proofing times by half!

These take about 70 minutes to make (give and take).

The tops are buttery with a hint of coarse salt. Since the insides are on the sweeter side, it makes a nice flavor contrast. It reminds me of those rolls you get at Chinese places.

I love making bread, I find kneading dough relaxing and it makes a good exercise. So skip the gym tomorrow and flour your hands because we’re making these  Homemade Dinner Rolls.

Don’t worry! they’re easy, I’ll walk you through it step by step.

First, we make the dough and place it in a greased bowl. Cover with plastic wrap and a clean kitchen towel.

COOL TRICK: Grab a cup of water and place it in the microwave. Cook until water begins to boil (about 2 minutes).

Then open the microwave door, move the boiling cup of water on the back, and place the bowl that has the dough in the middle.

Close the door (DO NOT TURN ON THE MICROWAVE) and the dough will be completely proofed in 20 minutes instead of the usual hour. Awesome huh?

This method cuts your proofing time by a third!! Now you don’t have to spend hours in the kitchen. Here’s how the dough looks before and after:

See how fast it doubled its size? Now we cut them into small portions. I weighed mine to be exact but you can just eyeball them.

My ideal size is 2 1/4 oz each. You can make them bigger or smaller.

Next, we shape them into balls and place them on a greased rectangular baking pan. This recipe makes around 20-25 rolls, so use the biggest pan you have.

Since my pan was on the smaller size, I made just 15 rolls and froze the rest of the dough for another day. You can also use a rimmed cookie roll pan.

These balls need to proof for 15 minutes using the same microwave method.

If your microwave is too small for the baking pan, just let them rise covered in a draft-free area for 25-30 minutes.

Brush them with some melted butter, sprinkle some salt and they are ready in 20 minutes!

I took these to my daughter’s art class and they were a hit with the kids. My husband, on the other hand, cut them in half and made mini sandwiches with them. I loved having mine with coffee in the afternoon.

Ingredients

For Rolls

  • 1 1/4 cups cup warm milk*
  • 1 packet instant yeast
  • 1/4 cup sugar
  • 2 large eggs beaten
  • 1 1/2 teaspoons salt
  • 4 1/2 cups bread flour
  • 4 tablespoons unsalted butter softened

For topping

  • 2 Tablespoons of butter melted
  • Kosher Salt or any other coarse salt
US Customary - Metric

Instructions

  • In the bowl of a standing mixer** place the yeast, warm milk, eggs, salt, sugar, butter and 1 cup of the flour. Mix manually with a whisk until combined
  • Place the dough hook on the mixer and add the rest of the flour. Mix on medium - low speed for 6-7 minutes to knead the dough
  • Dough should be elastic and not sticky
  • Grease a bowl with non-stick spray or oil. Place the dough in the bowl
  • Cover the bowl with plastic paper and then with a clean kitchen towel
  • Heat a cup of water in the microwave until it starts boiling
  • Open the microwave door, move the cup of water to the back and place the bowl with the dough in the middle
  • Close the microwave door and let the dough proof for 20 minutes (dough should double its size). DO NOT TURN ON THE MICROWAVE
  • Remove dough from microwave and cut into 20 equal parts. Roll them into balls
  • Grease a large rectangular baking pan
  • Place the dough balls in the pan. Dough balls shouldn't be touching each other. If they are, get a bigger pan or use a second pan. Cover pan with plastic paper and a tea towel
  • Heat a cup of water in the microwave until it starts boiling
  • Open the microwave door, move the cup of water to the back and place the covered baking pan. If pan does not fit, simply let it proof inside an oven (as long as it's turned off). Let dough proof for 15-20 minutes
  • Preheat oven to 375 degrees Fahrenheit
  • Remove baking pan from microwave and brush each roll with the melted butter. Sprinkle the salt on each one
  • Bake for 20 minutes or until golden brown on top
  • Enjoy!

Notes

*Milk needs to be at a lukewarm temperature (around 100 Degrees F). If milk is too hot the yeast will die, if milk is cold or at room temp, the yeast will not activate.
**You can also make these by hand but the kneading times will be longer
***You can proof the dough in the refrigerator overnight and bake the next day

    I got my grandma’s recipe for her easy buns over the phone but it makes such a large amount and she knows it so well she neglected to give me the recipe in a detailed way, if that makes sense. Grandmas know everything but passing on their knowledge isn’t always easy. I tried another recipe similar to hers for a Friendsgiving and it was pretty good. But yours is much closer to hers and halves the amount so for my husband’s family over Thanksgiving, it was perfect. And oooohhh did I get raves! They turned out amazing and soft and even cooled didn’t harden like the other recipe. These are the closest to having Grandma here to make them herself so thank you soooo much! My mother-in-law wants me to make more tomorrow! This is a keeper!

      Hi Angel! I am so glad that these rolls remind you of grandma’s. I tend to agree, when I ask mine for recipes they’re never detailed, measurements are way off and cooking her dishes it’s never the same. Happy Thanksgiving

        Ok, the recipe calls for 1/4 cup of sugar. How much honey should I use?

          Same amount, if you want them sweeter just increase by 1 or 2 tablespoons. I find honey a much stronger flavor than sugar

    Hi!! I’m making these now … if I freeze a few dough balls, how do I bake them later? Do I have to defrost them, proof and bake, or proof them the 2 times before I freeze?
