Addicting Spicy Shrimp Avocado Toast
Have you gotten on the avocado toast train yet? If not, I highly recommend it, especially if you’re a lazy cook, live by yourself, or simply love experimenting in the kitchen.
Avocado toasts are awesome because they can be eaten for breakfast, lunch, or dinner. They are customizable, and of course, delicious.
Here are the basics: choose your bread, either baguette, sourdough, sandwich bread, or whatever you have available.
Spread some smashed avocado mixed in with salt, pepper, lemon, or cilantro. The comes the fun part, top them with anything and everything. Veggies, cured meats, poached egg, chicken, shrimp, etc.
So it’s perfect for a lazy cook since it doesn’t require a lot of planning, or even cooking for that matter.
This addicting Spicy Shrimp Avocado Toast is ready in 10 minutes or less and aside from toasting the bread, there’s no real cooking involved.
Imagine a crusty sourdough toast, with guacamole, topped with corn, cherry tomatoes, red onions and shrimp and finished with spicy mayo made out of Sriracha and mayonnaise. Amazing isn’t it?

Last week, our family was evacuated due to hurricane Irma, so we decided to fly out to New York while the storm passed.
During our time in New York, we went to Le Pain Quotidien and had a spicy shrimp avocado tartine. My husband and I loved it so much that we wanted it to recreate it at home.
Through some testing..ahem eating, we finally nailed the recipe to perfection. and I am so thrilled that I can whip this dish up any time of the week in a jiffy.
The spicy mayo really takes the shrimp avocado toast to another level.
It’s filling, hearty, and so delicious. The combination of vibrant and colorful veggies, the citrusy guacamole, the sriracha along with the toasty bread makes this dish so addicting.

Spicy Shrimp Avocado Toast
Ingredients
For Guacamole
- 2 Avocados ripe
- 2 tablespoons Cilantro chopped
- Juice of 1 lime
- Salt + Pepper to taste
For Toast
- 4 thick slices of sourdough bread
- 1/2 cup canned corn
- 1/8 Red onion thinly sliced
- 8 Cherry Tomatoes sliced
- 2 tablespoons Cilantro chopped
- 6 Shrimp cooked and chilled
- Salt + Pepper to taste
For Spicy Mayo*
- 1/4 cup Mayonnaise
- 1 tablespoon Sriracha
Instructions
For Guacamole
- Peel and halve the avocados. Place them in a bowl and mash with a fork. Add the cilantro, lime juice, salt, and pepper. Mix and taste. Add more lime or seasoning if needed
Assembly
- Toast the sourdough slices
- Cut the shrimp in half lengthwise. It will give you thinner pieces which makes them easier to eat
- In a bowl, mix the mayo and sriracha. If you'd like it spicier add more Sriracha
- Place the toasts on a plate. Spread a thin layer of spicy mayo. Divide the guacamole between the 4 toasts
- Add the shrimp, tomatoes, onions, cilantro, and corn. Season with salt and pepper
- Drizzle the spicy mayo on top
- Enjoy!
